Have a lot of leftover egg yolks from a baking project and don’t want to throw them away? No one likes to waste food. Sometimes, you made a recipe with egg whites and ended up with extra egg yolks and the question becomes what to do with them? Here are a dozen amazing (and incredible) things you can do with leftover egg yolks!
There are plenty of ways to use those extra egg yolks you might have. From hair products to paint, from ice cream to cookies to homemade dressing and hollandaise sauce, there are many ways to use those leftover yolks from savoury dishes to delicious desserts, there is more than one way to use up extra eggs yolks.
A Dozen Uses For Leftover Egg Yolks
According to the United States Department of Agriculture, a raw yolk from one standard, large egg provides the following:
- 55 calories
- 2.70 g of protein
- 4.51 g of fat
- 184 milligrams (mg) of cholesterol
- 0.61 g of carbohydrate
- 0.10 g of sugar
- 0 g of dietary fiber
Egg yolks contain at least seven essential minerals, including calcium, iron, magnesium, phosphorus, potassium, sodium, and zinc, plus many more in lower quantities. Egg yolks are a plentiful source of many vitamins, especially Vitamin A.
Duck, quail, goose, and turkey eggs contain higher amounts of many vital nutrients than chicken eggs.
There’s liquid gold in them their yolks! Don’t throw out extra yolks. Instead, make some cookies, make a cake, make some paint!! The next time you have a lot of egg yolks to spare, take a look at this terrific list of ways to use up your leftover egg yolks.
Here are some of my favorite ways to use up excess egg yolks:
● Freeze Egg Yolks for later use. This one isn’t as easy as freezing the egg white. Frozen egg yolks will become gelatinous if frozen as is so you must doctor them.
To freeze an egg yolk, beat in either 1/8 teaspoon salt or 1 1/2 teaspoons sugar or corn syrup per 1/4 cup of egg yolks (about 4 yolks).
Label the container with the number of yolks, the date, and whether you’ve added salt (for main dishes) or sweetener (for baking or desserts).
Freeze.
● Amongst the leftover egg yolk recipes listed, Bread pudding is the quintessential left-over dish! Bonus because it is a dessert.
● Make some creamy, delicious, yellow The epitome of silky egg yolk sauces. You can also make egg yolk pasta with this Seven Yolk Pasta Recipe.
● Make Spritz Cookies! They aren’t just for Christmas (mix up the colors and use different cookie plates), and they freeze very, very well! Hungarian Christmas cookies are another egg-cellent use for egg yolks. Cookies are always great for snack time regardless of the time of the year.
● Key Lime Pie – oh yum. Hubby and I just shared a piece of Key Lime Pie last night. Here is an no-baked Key Lime Pie recipe, and here is a baked Key Lime Pie recipe.
● Hollandaise Sauce is a favorite to top savory breakfasts items with. It goes perfectly with egg, sausage, ham, cheese, biscuits… the list is endless. And of course, on eggs benedict – which is not just for special occasions!
● French Buttercream Frosting. If you have oodles of egg yolks, there is the popular Joy of Cooking Yellow Butter Cake Recipe.
● Mmmm creamy egg yolk custards are a favorite with nearly everyone, and this Easy Egg Yolk Custard Recipe is fast and easy-to-make. This homemade custard recipe can be used as a pastry, pie, or banana cream cake filling or served on its own.
● Use egg yolk to make a hair mask! Egg yolks are rich in nutrients that will revitalize your hair. Just watch the water temperature when you rinse. The last thing you want to do is smell like a cooked egg for days.
● Crème brûlée! Sonny-boy does not usually eat dessert (I want to have him tested to see if he is really my kid, I don’t care how much he looks like me). He does, however, eat crème brûlée! He orders it ever every time we go out to a restaurant. I ended up giving him a blow torch for when he makes his own.
● Egg Yolk Paint!! They claim this paint is edible.
● Tempera Paint! This is obviously not edible. Tempera is a type of paint made using egg yolk. It is still used today by some artists but it was very popular in ancient Egypt as well as during the Italian Renaissance. (Learn something new every day!)
● Ice cream! There are a lot of great egg yolk ice cream recipes out there.

Love this list – thank you. Another idea is Pantry Pasta with egg yolk rather than a tomato sauce. I use this recipe and add extra veggies (and ususlly skip the croutons): easy pantry pasta
