Greek Quinoa Salad Recipe

This easy to make, delicious Greek Quinoa Salad recipe is a wonderful lunch entree or great side dish. If you are looking for tasty quinoa recipe, try this Greek Quinoa Salad today!
Prep Time: 20 minutes
Cook Time: 15 Minutes
Ingredients:
● 1½ cups Quinoa
● 3 cups Water
● 1 Red Bell Pepper
● 1 medium Ripe Tomato
● 1 cup of Cucumber
● 14 oz Chickpeas (1 can)
● 4oz Feta Cheese Crumbles
● ¾ cup Greek Dressing
Directions:
● Cook quinoa in water according to package directions and drain. (The quinoa used in this recipe had a 2-1 ratio.) You will know when your quinoa is done when the little white swirls pop out around the grain. You cannot see them until it is about cooked. The cooked quinoa should be firm but chewy and not too soft.
● While quinoa is cooking (which takes approximately 15 minutes once the water has come to the boil), thoroughly wash and chop the pepper, tomato and cucumber.
● Drain cooked quinoa.
● Add quinoa and chopped vegetables to a large mixing bowl.
● Drain chickpeas; mix into the vegetables and quinoa in the bowl.
● Add feta cheese.
● Mix in Greek dressing; stir well to coat completely.
● Serve immediately.
● Makes 10 servings Greek Quinoa Salad
Notes:
● If your tomato is really ripe and on the wet side, do not add it into the salad until just before serving. You want to avoid making the salad too sticky.
● If you are not serving immediately, hold off adding the feta and Greek dressing until ready to serve. Just cover the combined quinoa, vegetables and chickpeas. When ready to serve, uncover add the feta and Greek dressing.
● Use a bottled Greek dressing or make your own by using extra virgin olive oil, lemon juice, oregano, salt, pepper and garlic powder to taste.
● If you have leftovers, you will probably need to add more Greek dressing before eating those leftovers the next day. The quinoa really soaks in the liquid!
● Quinoa substitutes well in nearly any cold pasta type of recipe. Try using quinoa in place of pasta in your old pasta salad recipes for a new twist on an old favorite.
