Chicken Spaghetti Casserole Recipe
Back on my old blog, I had asked for recipes and photos from readers to post. Cathy C. was kind enough to share with us her Chicken Spaghetti Casserole. This is a reworked version of her Chicken Spaghetti Casserole Recipe. Cathy’s original recipe had less cheese, used all the canned tomato liquid, and used frozen chicken patties. Chicken Spaghetti Casserole Ingredients:
● 8 oz dry Spaghetti
● 1 cup Ricotta Cheese
● 2 cups Mozzarella Cheese, shredded, divided
● 2 TBSP Grated Parmesan Cheese
● ½ tsp Italian Seasoning
● ½ tsp Garlic Powder
● 28 oz Meatless Spaghetti Sauce
● 1 can (14 ½ oz) Italian Diced Tomatoes, drain at least half the liquid
● 8 oz Sliced Mushrooms
● 1½ cup of Cooked Chicken, shredded
Chicken Spaghetti Casserole Mise en Place:
● Measuring Cup
● Measuring Spoons
● Large Pot
● Pasta Strainer
● 2 Large Bowls
● 13″x9″ Baking Dish
Chicken Spaghetti Casserole Directions:
● Preheat oven to 350º.
● Cook spaghetti according to directions.
● Meanwhile in a large bowl combine the ricotta, ½ cup mozzarella, Parmesan cheese, Italian seasoning and garlic powder; set aside.
● In another bowl combine the spaghetti sauce, tomatoes, and mushrooms.
● Drain spaghetti.
● Add 2 cups spaghetti sauce mixture and toss to coat, then transfer to a greased 13″x9″ baking dish, top with cheese mixture.
● Arrange shredded, cooked chicken over the top; drizzle with the remaining sauce mixture.
● Sprinkle with the remaining mozzarella.
● Bake uncovered at 350º for 40-45 minutes or until bubbly.
