This is an easy way to make a moist quick bread. This is basically a banana nut bread, but it uses a cake mix to get started. A great way to make a delicious sweet bread loaf.

Tips and variations for making this easy butter pecan banana loaf:
● This is a super easy recipe you can customize with nuts (pecans) or no nuts if your family prefers.
● You can add a half a cup to a whole cup of chopped pecans if your family enjoys nuts in their sweet breads.
● You can substitute butter flavoring or pecan flavoring (or extract) or banana flavor or extract for the vanilla extract. There is even butter pecan flavoring available, and would be a great substitution for the vanilla in this recipe! However, most people have vanilla extract in the house, so that was used in this recipe.
● How to make vanilla extract
● Use overripe bananas.
● If you use a vanilla cake mix, add chopped pecans and substitute butter flavoring (or pecan or butter pecan flavoring) for the vanilla extract (otherwise it will just be a vanilla sweet bread).
● I have not added chocolate chips to this loaf. I am not sure how it would turn out. If you make this and add chocolate chips, please let me know how it turned out for you!
● If you do not have a stand mixer or hand held mixer, you can make this recipe using some gold old fashioned sweat by beating the mixture in a large bowl using a rubber spatula or wooden spoon.
● I use my regular loaf pans to make this butter pecan banana bread recipe.
● You could use cooking spray to grease your pan, but the added ‘crust’ to the exterior of the loaf that greasing and flouring makes during the baking process, in addition to the ease of removing the loaf from the pan, makes greasing and flouring the ‘best results’ choice for this quick bread.
● You can add some chopped pecans to the top of the loaf about 20 minutes before it is fully baked. This would be in addition to the cup of pecans you add to the loaf mixture.
● You can butter individual slices of this butter pecan banana loaf if you are serving it for breakfast.
● I have not made this using mini loaf pans. You definitely could make this as a mini loaf, but the cooking time would be greatly reduced (and I have no idea what that would be).
● Store leftovers in an airtight container, plastic wrap, or even aluminum foil (not my first choice).
● This recipe is made with simple ingredients commonly found at your local grocery store.

● 4 Bananas, small, very ripe
● 1 box Butter Pecan Cake Mix (15.25oz)
● 1 tsp Vanilla Extract
● 3 large Eggs
● ½ – 1 cup Pecans
Easy Butter Pecan Banana Loaf Mise en Place:
● Loaf Pan (bread pan)
● Parchment Paper
● Shortening (to grease the loaf pan)
● All-purpose Flour (to flour the loaf pan)
● Stand Mixer (paddle attachment, whisk, bowls, etc.) or Hand Mixer
● Measuring Cup
● Measuring Spoons
● Rubber Spatula
● Wire Cooling Rack
Easy Butter Pecan Banana Loaf Recipe Directions:
1. Preheat oven to 350ºF.
2. Grease and flour a loaf pan. Line the bottom with parchment paper. Set aside.
3. In a large mixing bowl, smash the very ripe bananas.
4. Add the cake mix, vanilla extract, and eggs. Mix well on low to medium speed using an electric mixer until the mashed bananas and cake mixture are well combined.
5. Add the nuts to the cake-banana mixture by folding them in by hand.
6. Pour the batter into the prepared loaf pan.
7. Bake in a preheated 350ºF oven for approximately 35 – 40 minutes or until it is golden brown and an inserted toothpick into the middle of the sweet bread comes out clean.
8. Remove the butter pecan banana loaf from the oven and allow it to rest in the pan for 5 minutes.
9. Turn out the loaf from the tin.
10. Allow the butter pecan banana loaf to cool completely before cutting on a wire rack.
