Leafy Brussels Sprouts with Bacon Recipe
I grew Brussels Sprouts this year in my container garden! All I can say, is yummmmmmmmy! I needed a new recipe to enjoy these tasty delights, and this leafy (because you pull the little sprouts apart) Brussels sprouts with bacon (I swear bacon pairs soooo well with spouts) recipe is a oh so good!
Leafy Brussels Sprouts with Bacon Ingredients:
● 1 lb Brussels Sprouts
● 6 slices Bacon, uncooked
● Salt, to taste
● Pepper, to taste
● ¼ cup Raspberry Preserves
● ½ tsp Red Wine Vinegar
● dash Red Chili Flakes
● 2 TBSP Oil
Leafy Brussels Sprouts with Bacon Mise en Place:
● Knife
● Cutting Board
● Bowl
● Spatula
● Frying Pan
● Measuring Cup
● Measuring Spoons
● Tongs
● Serving Bowl
Leafy Brussels Sprouts with Bacon Directions:
● Begin by mixing up the dressing. In a bowl, combine the raspberry preserves and the red wine vinegar. Mix well. If the mixture is a bit lumpy, heat it in the microwave for 30 seconds to melt some of the jelly. Add the chili flakes if you are going to use them at this point. Taste for seasoning preference, and make adjustments. More sweet, add more jelly. More Tart, add more vinegar. Hotter? Add more chili flakes. Set aside.
● In a fry pan, fry the bacon until crisp. Remove most of the fat, but leave some behind in the pan, and remove the bacon to a plate. Crumble.
● Trim the ends off the Brussels sprouts.
● Rinse and begin to peel the leaves off the sprouts. No need to be perfect here, just peel as much as you get off, and then slice the rest of the sprout in slices.
● In the frying pan you fried the bacon in, add the Brussels sprout leaves. Sauté them for a few minutes, and add the salt and pepper. When the sprouts have wilted, and are shiny, glossy and a vibrant green, (approximately 4 – 5 min) add the bacon crumbles. Mix well
.
● Place Brussels Sprouts and bacon mixture into a serving bow.
● Mix together raspberry preserves mixture and two tablespoons of oil. Mix well, taste for your preference of sweet and tart, (make adjustments if necessary) and pour over the sprouts.
● Toss to coat.
● Serve.
