This keto friendly, low-carb friendly slow cooker soup recipe has that smoky, slightly salty sausage flavor mixed with yummy nutritious cabbage. Easy to make, this wonderful cabbage and sausage soup is an excellent lunch, dinner, or soup appetizer and really hits the spot on a cold day. Yum!
Slow Cooker Cabbage and Sausage Soup Recipe
Notes:
● Use whatever kind of sausage you prefer – Italian, Chorizo, Andouille, etc.
● While I have never done it, you could definitely use smoked sausage (Italian, Polish) and just dice it up into bite-sized pieces. If your sausage is not precooked, make certain to cook it before adding it to the soup.
● This is 1.5 quarts of liquid plus the bulk for the food. A mini slow cooker might be too small (2 or 2.5 qt) but you should be ok with 4qt+ slow cooker.
Slow Cooker Cabbage and Sausage Soup Ingredients:
2 cups Ground Sausage, cooked
1 Head of Cabbage, small
1 TBSP Dill, dried
½ Onion
Salt, to taste
Pepper, to taste
6 cups Chicken Stock
1 Red Sweet Bell Pepper
Slow Cooker Cabbage and Sausage Soup Mise en Place:
● Slow Cooker
● Frying Pan (if not using a multicooker)
● Spoon
● Measuring Spoons
● Measuring Cup
● Cutting Board
● Knife
Slow Cooker Cabbage and Sausage Soup Directions:
● Cook your ground sausage. Drain fat from pan.
● Chop up the cabbage, leaving only the inner core. Discard the core.
● Chop up one half of a yellow or white onion.
● Transfer the cabbage, cooked ground sausage, 1 tablespoon of dill, chopped onion, and salt and pepper to taste into a slow cooker bowl.
● Pour six cups of chicken stock over the ingredients in the slow cooker.
● Cover and cook on low for 6 – 7 hours or high for 3 – 4 hours.
● Chop one red sweet bell pepper.
● In the last hour of cooking, add the red pepper so that it cooks through but remains slightly crunchy to give extra texture and brightness with the soup.
● Serve with buttered bread and enjoy!
