Stews do not get any easier to make than this delicious Tex-Mex chicken stew! Flavorful and fabulous, this chicken stew can either be served by itself, or over rice, or accompanied by cornbread for a tasty dinner or lunch the entire family will enjoy.
Slow Cooker Recipe: Tex-Mex Chicken Stew
Tex-Mex is a blend of Mexican and American cuisines, deriving from the culinary creations of the Tejano people (literally it means Texas). Basically, it seems to be the Americanization of foods considered to be traditionally Mexican. There are whole schools of thought as to what makes something Tex-Mex versus Mexican cuisine – I just know both are very tasty, and I don’t sit around overthinking it.
Notes:
After shredding the chicken, taste the stew. If you feel it needs a bit more seasoning, add some chili seasoning and/or cumin. I found just the salsa, salt, and pepper was enough to season it well. This is just optional, and according to your taste.
This recipe uses 1 pound of chicken which is approximately three normal sized chicken breast. Sometimes you see the ones that look more like the size of a goose or turkey breast though, so go by weight, not by the number of chicken breasts.
This recipe will serve 4 without rice. If you make rice to go with the Tex-Mex chicken stew (recommended) this had 6 servings.
Slow Cooker Recipe: Tex-Mex Chicken Stew Ingredients:
● 1lb Chicken Breasts
● Salt, to taste
● Pepper, to taste
● 20 oz Black Beans (1 can)
● 8 oz Cream Cheese
● 1 cup Salsa
● 1 cup Corn, frozen
● ½ cup diced Green Pepper
● 1 tsp Garlic, minced

● Slow Cooker
● Knife
● Cutting Board
● Forks (to shred chicken)
● Measuring Cup
● Measuring Spoons
Slow Cooker Recipe: Tex-Mex Chicken Stew Directions:
● Season the chicken breasts with salt and pepper, place into the slow cooker bowl.
● Drain and rinse the 20 ounce can of black beans, place into the slow cooker bowl.
● Cut the 8 ounces cream cheese into squares, place into the slow cooker bowl.
● Add 1 cup salsa, 1 cup frozen corn, 1 cup diced green pepper, 1 teaspoon of minced garlic, and add some salt and pepper to your taste to the slow cooker bowl.
● Cook on low for 5 – 6 hours or high for 1 – 2 hours.
● Remove the chicken from the cooker and with two forks, begin to shred the chicken breasts. Add them back into the slow cooker bowl.
● Allow entire recipe to cook for another hour on high or 2 hours on low.
● Serve over rice.
