Roll cakes may seem like they are difficult to make as well as a lot of work, but that is just not so. The results merely look impressive and time-intensive. Only you will know how simple this particular angel food cake roll recipe is to make.
Tips and variations for making this Easy Angel Food Cake Roll:
● This angel food cake roll recipe is very simple to make. I used a boxed angel food cake mix, but if you have a homemade angel food cake recipe you love, use that instead!
● I used strawberries, but you could use raspberries, blackberries, blueberries, cherries – a combination of berries to form a triple berry. This would be a great strawberry, blueberry and cream combination cake to form a red, white, and blue dessert for the summer holidays! The berry combinations are endless and you are only bound by your taste buds.
● Some people call this type of jelly roll cake a Swiss roll.
● Use parchment paper to line the bottom of your jelly roll pan – it will make the cake removal much easier.
● For my UK and Australian friends: confectioners sugar is icing sugar (powdered sugar, 10x).
Easy Angel Food Cake Roll Ingredients
● 1 box of Angel food cake mix
● Water (as per box directions)
● ¼ cup Confectioners Sugar
● 1 cup Cream Cheese
● 1 cup Marshmallow Fluff
● 1¼ cup Strawberries, thinly sliced, divided
Easy Angel Food Cake Roll Mise en Place:
● Measuring Cup
● Spatula
● Stand Mixer
● Parchment Paper
● Non-stick Spray
● Jelly Roll Pan
● Clean Dish Towel
Easy Angel Food Cake Roll Directions
● Preheat oven to 350°F.
● Spray the sides of a jelly roll pan (10x15x1) with nonstick spray, and line the bottom of the pan with parchment paper. Set aside.
● Using a stand mixer, mix together the prepackaged angel food cake mix and water (package directions specific).
● Pour the angel food cake batter into the prepared jelly roll pan.
● Place on the middle rack of a preheated 350° oven and bake for approximately 25 minutes . The cake will be golden brown on the top and edges.
● Lay down a clean kitchen towel and sprinkle with confectioners sugar.
● Carefully flip the baked angel food cake onto the towel quickly. Peel off the parchment paper from the angel food cake.
● Take the edge of the towel and gently roll up the cake. Place in freezer for 2-5 minutes until cool.
● Once the angel food cake cooled, whip up the filling by combining 1 cup of cream cheese and 1 cup of marshmallow fluff together. Mix well.
● Gently unroll your cake. It is ok if it cracks a little. It gives it character. Then carefully spread out your filling and lay down 1 cup of thinly sliced strawberries.
● Roll back up and place back in the fridge.
● Dust with more confectioners sugar, and top with more sliced strawberries before serving, if desired.
● Refrigerate all leftovers.

I was wondering what you thought about adding some lemon curd to the filling and then topping it with blueberries. Do you think that would work with the marshmallow cream? I think it would be good but I am not sure because i have truly never worked with the marshmallow cream, Thank You.
