Strawberry Shortcake Cheesecake Parfait Recipe
● I love the homemade shortcake but an easy replacement step is store-bought shortcake or angel food cake.
● Whipped cream is used in this recipe. If you prefer whipped topping, go for it!
● Use a stand mixer – or at the least, a hand mixer, to make the cheesecake filling. Trying to whip that by hand is time-consuming and requires a lot of arm-strength.
● For my UK and Australian friends: confectioners sugar is icing sugar (powdered sugar, 10x).
Strawberry Shortcake Cheesecake Parfait Recipe Ingredients:
Shortcake Ingredients:
● 2 cups Flour
● 1½ tsp Baking Powder
● ¼ tsp Baking Soda
● 3 TBSP Sugar
● ½ tsp Salt
● 1½ cups Heavy Cream
Cheesecake Filling Ingredients:
● 8 oz. Cream Cheese
● 1 cup Confectioners Sugar
● 1 cup Heavy Cream
● 2 tsp Vanilla Extract
Remaining Parfait Ingredients:
● 20 Fresh strawberries, chopped
● Whipped cream for topping
Strawberry Shortcake Cheesecake Parfait Mise en Place:
● 9″x9″ Baking Pan
● Measuring Cup
● Measuring Spoons
● Spatula
● Stand Mixer
● Bowl(s)
● 4 Glasses or Individual Serving Bowls
● Spoon
Strawberry Shortcake Cheesecake Parfait Recipe Directions:
1. Preheat oven to 400°F.
2. Spray a 9″x9″ inch baking pan with non-stick cooking spray, set aside.
3. In a large bowl, whisk together two cups of flour, 1½ teaspoon baking soda, ¼ teaspoon of baking powder, three tablespoons of sugar, and ½ teaspoon of salt.
4. Stir in 1½ cups of heavy cream until dough develops and ingredients are just combined.
5. Place dough into pan and spread evenly. It does not have to completely fill the pan.
6. Bake for 18-20 minutes in a preheated v oven until shortcake begins to look golden-brown on top.
7. While the shortcake is baking make the cheesecake:
8. Using a stand mixer (or hand-held mixer), in a laege bowl, mix together eight ounces of cream cheese, one cup of confectioners sugar, one cup of heavy cream, and two teaspoons of vanilla extract. Set aside.
9. Chop 20 fresh strawberries; set aside.
10. Remove shortcake from the oven and allow shortcake to cool.
11. Once the short cake is cooled, take your parfait glasses and layer a few chunks of shortcake in the bottom of each one (four total). Add a layer of cheesecake filling, followed by a layer of strawberries. Repeat the shortcake and cheesecake layers. Top with whipped cream and more chopped strawberries.
12. Serve while cold.
