What is the difference between a jam and preserves?
Jam is made with a gel to preserve it such as pectin. A preserve is not going to gel as no preservative (ironic, huh?) is used. Because this kiwi recipe is a preserve and not a jam, it does not contain any pectin.
Hubby and I traveled to New Zealand earlier this year, and got to visit some kiwi groves.
There are several different types of kiwi fruit: the green that we are most familiar with, the gold kiwi fruit which is rarer and more expensive, and then some new kiwi fruits are being developed such as a red kiwi that tastes a bit berry-ish.
The green kiwis are most plentiful, grown to export and the “best” are indeed shipped overseas. Yup, this is a cash crop so they want to maximize profits by sending overseas.
Needless to say, once I saw how these delicious little fruits were grown, I wanted to make some recipes featuring kiwi fruit! Note that kiwi harvest time in New Zealand is March through May, kiwi harvest time in the northern hemisphere is September through November. When the kiwi fruit is actually harvested will, of course, depend on the weather where they are grown.
Tips for making this Easy Kiwi Fruit Preserves Recipe
● 1-pound of Kiwi fruit is approximately six kiwis.
● Because it is a preserve and not a jam, we did not use any pectin.
● The texture of the preserve is loose, syrupy and pulpy and not as tight as a jam.
● This preserve tastes amazing with on plain bread, as a part of a charcuterie board and/or as a sweet fruity glaze for pork tenderloin and chops.
● This will last in the refrigerator for up to 4 weeks.
Easy Kiwi Fruit Preserves Recipe Ingredients:
● 2lbs Fresh Kiwi Fruit
● 1½ cup Sugar
● 1 large Lemon
Easy Kiwi Fruit Preserves Mise en Place:
● Cutting Board
● Knife
● Peeler
● Large Saucepan
● Measuring Cup
● Grater
● Spoon
Easy Kiwi Fruit Preserves Recipe Instructions:
1. Peel, and roughly chop, the fresh kiwi fruit.
2. In a large saucepan combine chopped kiwi, sugar, zest and juice of one lemon.
3. Bring it to a gentle boil, over medium-high heat. Do not stir but gently shake the saucepan slightly to make sure the sugar dissolves in the kiwi juice that gets released.
4. Drop the heat to low, to maintain a steady simmer.
5. Cook for 30 minutes, stirring occasionally, till the kiwis are extremely soft and pulpy and the preserves have reduced to a thick syrupy consistency.
6. Let the kiwi preserves cool in the pan, and then into mason jars.
7. Keep refrigerated. The kiwi fruit preserves should last up to four weeks in your fridge.
