Jam Filled Cream Cheese Cutout Cookies Recipe
These are so easy to make! You can dress them up with a sprinkle of powdered sugar while they are still warm. Or (and) add a few drops of food coloring to the dough to change the look – red for Valentine’s day, green for Christmas or St Patrick’s Day, Orange for Autumn or Thanksgiving… the ideas are endless!
Jam Filled Cream Cheese Cutout Cookies Recipe Notes:
● Raspberry Jam was used in this recipe. You can use whatever flavor of jam you like best.
● The jam will burn your skin when it is hot. Have care when removing your cookies from the oven, and when you are transferring them to a cookie rack. Allow them to cool before eating.
Jam Filled Cream Cheese Cutout Cookies Ingredients:
● 8 TBSP Butter, softened (1 stick)
● 1 cup Sugar
● 4 oz Cream Cheese, softened
● 1 tsp Vanilla extract
● 1 Egg
● 2 ½ cups All-purpose White Flour
● 1/8 tsp Salt
● 12oz jar of Jam
● 8 drops Food Coloring, if desired
● Confectionery Sugar, if desired
Jam Filled Cream Cheese Cutout Cookies Mise en Place:
● Measuring Cup
● Stand Mixer, bowl and beaters
● Spatula
● Measuring Spoons
● Spoon
● Wire Cooling Rack
Jam Filled Cream Cheese Cutout Cookies Directions:
● In a mixing bowl combine butter, sugar, and cream cheese, beat until smooth.
● Add vanilla and egg, beat until well blended.
● Add flour and salt. Mix well.
● Add food coloring if desired.
● Transfer dough to another bowl, cover, and refrigerate for 2 hours for easier handling.
● After the 2-hour refrigeration, Preheat the oven to 375°F.
● Lightly flour your work surface, roll out 1/3 of dough to 1/8″ thick circle, keep the remaining dough in the refrigerator.
● With a 2½” round cookie cutter (or end of a glass), cut dough.
● Place circles on an ungreased cookie sheet.
● Fill with ½ teaspoon of jam.
● Fold up three sides without covering the jam, pinch the corners to seal.
● Bake in preheated 375° oven for 8 minutes or until edges of the cookie are slightly brown. (DO NOT OVERBAKE!)
● Cool for 2-3 minutes on a cookie rack (until jam stops bubbling).
● Transfer onto wire racks to finish cooling.
● Sprinkle with confectionery sugar if desired.
● Repeat the process with the remaining dough in the refrigerator.
