Hairy Monster Cookies Recipe Directions:
For the Cookies:
1. Preheat the oven to 350°F.
2. Line a baking sheet with parchment paper; set aside.
3. Into a large bowl, combine the flour and salt, and keep aside.
4. In the large bowl of a stand mixer (a separate bowl, you could also use a hand mixer), add unsalted butter and dark brown sugar. Beat on medium-high until the mixture turns creamy and fluffy.
5. Add the egg and vanilla extract and beat until well incorporated.
6. Add the flour mixture to the butter mixture in batches and mix until the dough is formed (the dough should pull away from the sides of the bowl).
7. Roll out the dough on a lightly floured surface to ¼-inch thickness and cut out round cookies using a 3-inch or 2½ inch round cookie cutter.
8. Place the cutouts on the prepared cookie sheet and bake for 12-14 min in a preheated 350°F oven.
9. Let the cookies cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.

11. Add the vanilla extract.
12. Add the confectioners’ sugar in small batches (no more than a cup at a time) and beat until the frosting is a smooth and fluffy consistency (5-6 min). If your frosting is too thick, add one or two tablespoons of cream to smooth it out.
13. Divide the frosting into three equal parts. Tint three parts with green, yellow, and red food colors (or other colors of your choosing).
14. Put grass frosting tips into three different piping bags and fill the piping bags with prepared colored frosting.
15. Pipe the fur onto the cupcakes. Remember to start at the edges and work your way in.
16. Carefully place 1-3 (or more!) candy eyes on the frosted cookies -decorating tweezers could help. Note: do not decorate with candy eyes if you are storing these cookies as the cookies might turn soggy.
17. Allow to air dry on the wire rack.
18. When stored in the refrigerator, these cookies (sans eyes) will stay fresh for 2-3 days in an airtight container.
