These oven-baked wings are crispy and delicious. They are juicy and flavorful without being overwhelmingly spicy.
I grew up in Buffalo. Wings were invented at the Anchor Bar in Buffalo back in the 1960s. Buffalo-style, Buffalo flavor, Buffalo wings; the “B” is always a capital letter as they are named after a city, not an animal (buffalo are mammals that do not have wings).

Crispy chicken wings were just a part of our food offerings when we were growing up. We did not call them Buffalo wings; they were just wings. Wings in bars were a staple. There were 5¢ wing days, later 10¢ wing days – I am frankly shocked that a wing is a dollar or more at a restaurant these days! Yes, I am old.
Now, as good as wings tasted, tiny little chicken wings dipped in sauce and deep-fried wings were not exactly good for you. My grandmother was appalled that we ate them, so when she prepared them at home, they were skinned first and then baked in an oven. Yes, she went to a lot of trouble to skin those wings. They tasted delicious and had relatively little fat or calories compared to traditional wings, but the work… oh my. You can prepare these wings skinned, but I am not gonna lie; that is a lot of time and effort. And, without skin, they are not crispy wings. Something to keep in mind.
As far as what to serve with wings? Pizza (always pizza and wings as a pairing), subs, salad, carrot sticks, celery, and bleu cheese. That’s it. Anything else immediately marks you as an out-of-townee. They were never even served with beef on weck (another delicious local culinary experience). I never knew people would serve with anything other than bleu cheese as the dip until I started traveling a lot, and to be quite honest, the idea of ranch dressing on wings is simply no bueno to me. But, to each their own.
Today, wings are thought of as game day food during football season, sports bar food, and tasty appetizers. Use this great recipe or your favorite sauce to make these crispy baked wings according to the oven instructions below. Serve with celery sticks, cut raw carrots, and blue cheese dressing or blue cheese dip for an excellent and fun party food!
Tips and variations for making these oven-baked wings:
● If you are using a bag of frozen wings, defrost them before proceeding with this recipe (I like to defrost in the fridge overnight).
● Use chicken wings or wingettes. If you use a turkey wing, it will take longer to bake.
● Drums or wings are best, not whole chicken wings.
● For crispier skin, coat wings lightly with cooking spray or brush with vegetable oil before baking.
● You can use a hot sauce other than Frank’s, but Frank’s is what is used in the Buffalo area.
● You can use the recipe on the back of Frank’s hot sauce (Buffalo sauce) bottle if you like and then bake according to these directions. It is a classic recipe for a reason.
● You can skin the wings before baking by using a sharp knife to remove the skin.
● The USDA recommends an internal baked temperature of 165°F for chicken.
● Two pounds of chicken wings is 8-10 wings, depending on the size of the wings.
● This is a basic recipe for a medium chicken wing sauce. You can vary the recipe and make it a hotter wing sauce for hot wings. Vulcanic would add chili powder and incredibly spicy peppers to the sauce. I do not recommend it.
● Buffalo chicken wings are always served with bleu cheese, not ranch. *smile*
● This recipe is made with ingredients commonly found at your local grocery store.

● Large Bowl
● Measuring Cup
● Measuring Spoons
● Rimmed Baking Sheet (a baking sheet with sides)
● Rubber Spatula
● Parchment Paper (or Aluminum Foil)

1. Preheat your oven to 400°F.
2. Season your wings with pepper and garlic in a large bowl or on a large plate.
3. Place chicken wings in a single layer on a parchment paper lined rimmed baking sheet (a baking sheet with sides).
4. Bake wings for 10-12 minutes in a preheated 400-degree Fahrenheit oven.
5. While they bake, mix Frank’s hot sauce, melted butter, and Worcestershire sauce in a medium bowl.
6. Pull the wings out of the oven and transfer them to the bowl of sauce.
7. Coat the wings evenly with the chicken wing sauce and place the coated wings back on the sheet pan.
8. Bake for an additional 8-10 minutes or until the chicken is cooked to an internal temperature of 165 degrees Fahrenheit.
9. Serve hot with cut carrots, cut celery, and bleu cheese dressing.
10. Refrigerate any leftovers in an airtight container. Reheat leftovers or eat the cooked wings cold.
