Easy to make and loved by the entire family, chicken cacciatore is a delicious Italian comfort food. This simple recipe cooks up quickly and is a terrific family dinner on a busy weeknight.

This classic Italian dish can be made with skinless chicken breasts (white meat) or skinless thighs (dark meat). I used thighs as we like the flavor of the dark meat. Truly a rustic Italian chicken dish! Normally, due to the rich tomato sauce in this dish (and other Italian foods), I would serve chicken cacciatore with red wine, homemade bread, and a side salad. If you prefer white wine (which many people do with chicken), go for it!
The word cacciatore means hunters in Italian (cacciator is the single ‘hunter’). Cacciare means ‘to hunt’ in Latin. It is assumed that hunters made the original recipe with the wild game they caught (a hunter-style meal). The peppers, onion, garlic, and spices were typical additions.

Tips and variations for making this chicken cacciatore recipe:
● I used orange and yellow, but any color of bell pepper can be substituted – green bell pepper or red bell pepper!
● You can cut the chicken things into bite-sized pieces or leave them whole.
● We use low-sodium chicken broth.
● You can use fresh minced garlic or preut (minced) garlic in a jar. Any Italian store will have it in a large jar.
● Hubby loves to use tomato paste powder. We always have it on hand and do not have to worry about having leftovers from the cans.
● If cooking the Orzo at the same time, begin cooking it as you flip the chicken to time it just right.
● I used orzo, but egg noodles, zucchini noodles, or other pasta that your family enjoys are also good accompaniments with the cacciatore sauce.
● You can add fresh herbs of your choice, Italian seasoning, red pepper flakes, kalamata olives, green olives, black olives, fresh mushrooms, and/or Parmesan cheese for a different flavor.
● For best results, store leftover chicken cacciatore in the fridge in an airtight container for up to 4 days. Reheat in the microwave at 50% power until warmed through.

● 1 pound boneless, skinless Chicken Thighs
● 1 teaspoon Salt, divided
● 1 teaspoon Black Pepper, divided
● 1 cup fresh Onion, sliced
● 2 Bell Peppers, sliced
● 2 Tablespoons Tomato Paste

● ½ cup Chicken Broth
● 1½ cups fresh Cherry Tomatoes
● 1 Tablespoon fresh Parsley

Chicken Cacciatore Recipe Directions:
1. Warm the skillet and oil over medium heat for 5 minutes.
2. Add the chicken thighs in a single layer and sprinkle the tops with a pinch of salt and pepper.
3. Fry chicken on one side until browned, about 7 minutes. Flip and continue frying until the chicken is cooked through, about 6-7 minutes. Transfer to a plate for now.
4. Add the onion, bell pepper, and remaining salt and pepper.
5. Continue frying, stirring occasionally, until the onions have yellowed and softened, about 5-6 minutes.
6. Add the tomato paste, rosemary, garlic, and chicken broth. Bring to a boil while stirring, and cook until the broth thickens slightly, about 3 minutes.
7. Return the cooked chicken to the pan and add the cherry tomatoes. Cook for approximately 5 minutes or until the tomatoes soften. The USDA recommends a cooked chicken temperatures of 165 °F. Use a meat thermometer to confirm.
8. Remove from heat and sprinkle with fresh parsley.
9. Serve immediately with cooked orzo.
