Ricotta cake is a traditional Italian cake. It is a simple cake without layers or frosting. This berry ricotta cake is the perfect dessert! It is not only delicious with its buttery texture, hint of sweetness, and tender crumb, but also easy to make. I advise using an electric mixer, but you could mix by hand, provided you incorporate all the ingredients well.
What is ricotta cheese?
Ricotta cheese is an Italian whey cheese made from the whey leftover from the production of other cheeses. It is made from sheep, cow, goat, or water buffalo milk.

Tips and variations for making this easy and moist berry ricotta cake recipe:
● Use full-fat ricotta cheese. You can use skim or part-skim, but I find the whole milk ricotta cheese is better for baking, in my opinion.
● You can use fresh or frozen berries. If you are topping the cake with more berries, fresh berries look better.
● While this is not a lemon ricotta cake, topping those berries with fresh lemon zest or orange zest, as you prefer. Use fresh lemons or fresh oranges for the best taste.
● Before adding the berries to the mix, lightly coat them with flour. This will help the berries keep their shape while baking.
● You can use a stand mixer and mix at low speed or medium speed until all the ingredients are well combined. You can also use a hand mixer.
● Do not beat too hard when combining the dry ingredients with the ricotta mix.
● If you do not have small eggs, this article suggests you can use three large eggs as a substitute. I have not done so, however.

● 1⅓ cup All-purpose Flour
● 1 cup Granulated Sugar
● 2 teaspoons Baking Powder
● 1 teaspoon Salt
● 4 small Eggs
● 1½ cups Whole Milk Ricotta Cheese
● ½ teaspoon Vanilla
● ½ cup unsalted butter, melted
● 1½ cups Berries (blueberries, blackberries, raspberries, and/or strawberries) fresh or frozen, divided
● ⅓ cup Confectioners’ Sugar
Berry Ricotta Cheese Cake Mise en Place:
● 9″ Springform Pan
● Medium Bowl
● Small Bowl

2. Generously grease a 9-inch springform pan. Set aside.
3. In a medium bowl, combine the flour, granulated sugar, baking powder, and salt.
4. In a separate small bowl, whisk together the eggs, ricotta, and vanilla extract. Set aside.
5. In the large mixing bowl of a stand mixer, on low speed combine the ricotta mixture and the dry ingredients until the ingredients are well incorporated.
6. Add the melted butter and blend the ingredients until well integrated.
7. Coat the berries lightly with flour to help them keep their shape while baking. This is an option, although recommended, step.
8. By hand, add one cup of berries to the ricotta batter. Fold in carefully by hand so the dough does not dye.
9. Pour the batter into the prepared baking pan. Place the remaining berries across the top of the batter.
10. Place berry ricotta cake into the preheated 350°F oven on the middle rack.
11. Bake the cake for approximately 45 minutes or until golden brown or until a toothpick comes out of the center of the cake clean. The cake will be slightly golden brown on the outside but still moist and tender inside.
12. Remove the ricotta cake from the oven and place it on a wire rack for 20 minutes.
