Tips and variations for making this corn casserole recipe:
● As of now, one can of corn is 15 ounces in the US.
● As of now, one can of creamed corn is 15 ounces in the US.
● For the regular corn, not cream-style corn, you can use frozen corn as a substitute if you like. It is best to cook the frozen corn as directed, then drain it, and then add it to the corn casserole mixture. Keeping the kernels frozen when adding them to the mixture may add extra unwanted liquid and a longer baking time.
● Butter in Baking: Essential Tips for Perfect Baked Goods
● In the United States, ½ cup butter = 1 stick, 1 cup = 2 sticks of butter
● This recipe uses salted butter. If you substitute unsalted butter, it will bake fine, but you may notice a slight taste difference.
● You will know it is done when the cheese has melted, and a toothpick comes out clean or with a few dry crumbs.
● If you make it without cheese, then you only need to do the toothpick check to see if it is done baking.
● To make this sweeter, try sweet whole-kernel corn instead of regular corn and/or the honey Jiffy mix
● Jiffy cornbread muffin mix is used in this recipe, but you can use any brand of cornbread muffin mix.
● While I have not done so, to make it gluten-free, try the gluten-free Crusteaz box mix instead of the Jiffy mix.
● Enjoy topped with honey on individual servings.
● To mix it up, try adding Parmesan cheese, pepperjack cheese, green chiles, fresh herbs, sliced jalapeño pepper rings, pickled jalapeño peppers, diced green or red bell peppers, chopped turkey breast, chopped roast chicken breast, or diced ham.
● Mix the cheese into the mixture without topping it, or add more cheese to the mixture AND top it!
● This corn casserole tastes best fresh from the oven, but you can reheat it at a low temperature in your oven. You may want to consider adding a little more cheese when reheating.
