No-Bake Coconut Balls Recipe
These No-Bake Coconut Balls are unique. And simple to make. The only thing you want to be sure of is that your unsweetened coconut flakes are fairly small. The Bob’s Red Mill shredded, unsweetened coconut is tiny enough to use without having to run your unsweetened shredded coconut through the mini processor.
Hubby says these remind him of the Toasted Coconut Good Humor Bars that were sold off the Good Humor truck when he was a kid. Hubby adores these No-Bake Coconut Balls. I have given them away to people who do not like sweets, who do like sweets, and people who fall in between. These have been universally loved by all!

Tips for making this no-bake coconut balls recipe:
● If you are making these for a specific holiday, you can dye the coconut with a little bit of food dye. Red for Christmas or Valentine’s day, Green for Christmas or St. Patricks day, Purple or Pink for spring, etc., etc.
● Personal choice, but we like these best when they are cold.
● These no-bake coconut balls will will last in the fridge for up to a week (in an air-tight container) so you can make them ahead of time for a party or work function.

No-Bake Coconut Balls Ingredients:
● 1 cup Corn Flakes, crushed
● ¼ cup Roasted Almonds, halved (at least 18 nuts)
● 1 cup Sugar
● 1½ cups Unsalted Butter, room temperature
● 2 cups Powdered Milk
● 1 tsp Almond Extract
● 2½ cups Unsweetened, Shredded Coconut Flakes, divided
No-Bake Coconut Balls Mise en Place:
● Measuring Spoons
● Measuring Cup
● Bowl
● Spatula
● Stand Mixer (bowl, beater, etc)
● Parchment Paper
● Cutting Board
● Knife
● Mini Food Processor (optional)
No-Bake Coconut Balls Directions:
● Crush your corn flakes (give them a 10 second pulse in your mini food processor), set aside.
● Cut your almonds in half width-wise (not lengthwise), set aside.
● Using a stand mixer, beat together sugar and butter, until the texture is fluffy.
● By hand, mix dry powdered milk into the butter mixture.
● Add the crushed corn flakes, almond extract and 1 ½ cups of shredded coconut flakes to the butter mixture, mixing by hand until a ball is formed.
● Place your remaining shredded coconut into a small bowl.
● Scoop out a tablespoon of coconut ball dough mixture, and place it in your hand.
● Insert one of your half-nuts into the middle of the dough ball in your hand.
● Close the dough around the nut until it is completely covered.
● Now, roll that dough mixture between your palms until it forms a round ball.
● Roll the coconut ball in the small bowl of shredded coconut, covering completely.
● Place cookie balls on a parchment covered plate/counter, and allow to set up for a few minutes.
● By the time you are done rolling the last coconut ball, the first one should be firm enough to move and store without getting squished.
● Store in the refrigerator in an airtight container for up to one week.

These are sooooo tasty! I was afraid of putting an almond in the middle because I was afraid that was a choking hazard for my littles, so I threw a handful in the food processor with the corn flakes. That might have made mine too dry though because when I rolled the balls in the coconut flakes, they didn’t stick. Still super yummy though.

I have a repice for coconut ball half cup of condensed sweetend cream 1 and ahalfteaspoon powder susar 2 andhalf cupsof coconut . in a bowl mix half cup of sweetend condensed milk 1 cup of coconut and add 1 anhalf powder sugar put in fridge to harden for1 hour then make balls and roll in coconut please tell me if you have a repice like this
