Barbee asks:
Have you seen THIS???
I don’t like the old bread makers but this looks really really nifty. Your thoughts?
Hubby’s response:
Hi Barbee,
Actually, I don’t like the style of pasta maker.
If you are going to make pasta yourself, it needs to be an intimate experience. You need to be able to gently hold it in your hands, feel the texture, make sure it is not too wet nor not too dry, and work it with a firm but gently hand. The machine you asked about (linked here) is very analogous to a bread maker in that you just throw in the ingredients, press a few buttons, and let the machine do all the work.
But your pasta has no soul when you make it this way.
Years ago, I bought a pasta machine. It is built like a tank. It is also almost impossible to find. It seems to be sold out everywhere. We don’t use it much, mainly for perogi dough at Christmastime, but I do like it. And if I could find a place for you to buy it, I would recommend it.

We use a kitchenaid attachment for flattening out our pasta dough and make homemade ravioli. We do this maybe once or twice a year, but need to make my own homemade spaghetti or some such thing. I have seen how to cut by hand, but never tried it and not sure I want to. But I do love homemade pasta.

Thanks for your candidness.
I know what you mean about handling the pasta-I have watched Mario Batali countless times w/ his ‘well’ method.
Thanks for the advice-I think I’ll pass on this machine.
