Angler’s Soup Recipe
An angler is a person who fishes with a rod and line using a fish hook. If you are a fisherman who enjoys sports fishing, you are most likely an angler. Cod requires a heavy-duty fishing rod and line, but it is a rod and line fish.
Angler’s Soup Recipe Notes:
● If you do not have cod fillets, try haddock, pollack, or grouper as a substitute.
● If you do not have fresh parsley, dried parsley will do.
● If you do not have garlic cloves, substitute minced garlic from a jar.
● You can use small white or small red potatoes, peeled or unpeeled, your choice.
● Serve with warm homemade white bread or homemade yeast rolls! Yum!!
Angler’s Soup Recipe Ingredients:
● 12 slices Bacon
● 1 TBSP Butter
● 1 large Onion
● 2 Garlic Cloves
● 2 tbsp Fresh Parsley
● 1 tsp Dried Thyme
● 14.5oz Petite Diced Tomatoes (1 can)
● 32oz Chicken Stock
● 10 Small Potatoes
● 6oz Mushrooms
● 1 Red Pepper
● 2 lbs Skinless Cod Fillets
● Salt, to taste
● Black Pepper, to taste
Angler’s Soup Recipe Mise en Place:
● Frying pan
● Knife
● Cutting Board
● Soup Pot
● Measuring Cup
● Measuring Spoons
● Large Spoon
Angler’s Soup Recipe Directions:
1. Fry 12 slices of bacon in a large pan over medium heat until lightly browned, but not crisp. Drain on paper towel.
2. Chop bacon, set aside.
3. Melt 1 tablespoon of butter in a large soup pot.
4. Chop and then sauté one large onion in the melted butter until soft.
5. Add 2 cloves of chopped garlic, 1 teaspoon of dried thyme, and 2 teaspoons of fresh, chopped parsley to the onion mixture. Cook and stir
for one minute.
6. Add one can (14.5 ounces) of petite diced tomatoes and 32 ounces of chicken stock and bring to boil.
7. Reduce heat to simmer.
8. Chop 10 small potatoes; add them to the tomato mixture in the soup pot.
9. Chop 6 ounces of mushroom, and then add them to the tomato mixture in the soup pot.
10. Chop one red bell pepper, and then add it to the tomato mixture in the soup pot.
11. Cover and simmer until potatoes are fork tender.
12. Cut 2 pounds of skinless cod fillets into large pieces.
13. Add cod and bacon to the soup pot.
14. Simmer uncovered until fish is cooked, approximately 5-10 minutes.
15. Add salt and pepper to taste.
16. Garnish with fresh parsley and scallions if desired, when serving.
