Apple, Ham, and Cheese Instant Pot Breakfast Casserole Recipe
The instant pot crazy is real and doesn’t seem to be slowing down. It appears that everyone is on the lookout for a new and different instant pot recipe. This Apple, Ham, and Cheese Instant Pot Breakfast Casserole Recipe is a real winner on a cool fall or winter morning. If you have leftover ham (from Thanksgiving, Christmas, Easter, etc) or a ham steak that you heated up for dinner last night and now have leftover, give this unique recipe a try. It is filling. And, there is no reason you can’t use it as breakfast for dinner.
One of the things that always strikes me is the name “instant” pot. It really isn’t instant at all. It reminds me more of a multi-cooker than a slow-cooker. I will admit I do not use ours. Like most of the kitchen gadgets in our home, it is allllll Hubby. He likes it. To me, it seems a bit like work, but I can’t argue with the results.

Apple, Ham, and Cheese Instant Pot Breakfast Casserole Ingredients:
● 2 TBSP Butter
● 1 cup Cooked Chopped Ham
● 2 small Granny Smith Apples
● 5 cups Water, divided
● ¾ cup Instant Grits
● 2 large Eggs, lightly beaten
● 1 cup shredded Cheddar Cheese
Apple, Ham, and Cheese Instant Pot Breakfast Casserole Mise en Place:
● Cutting board
● Knife
● Instant Pot
● Mixing Bowl
● Measuring Cup
● Spatula or Spoon
● Aluminum Foil
● Baking Dish
● Non-stick Cooking Spray
● Pot Holders
Apple, Ham, and Cheese Instant Pot Breakfast Casserole Directions:
● Core, peel and dice two small granny smith apples. Set aside.
● Set Instant Pot to brown/saute
● Add 2 tablespoons of butter to Instant Pot. Heat for 1 minute.
● Add 1 cup of cooked chopped ham. Cook for 1 minute, stirring often.
● Add diced granny smith apples and stir. Cook for an additional minute.
● Pour apple and ham mixture into a large bowl and set aside. Wipe out Instant Pot.
● Add 3 cups of water and grits. Set Instant Pot to high to brown/Sautee mode. Cook until grits thicken.
● Pour grits into a bowl with ham and apples.
● Add 2 slightly beaten large eggs and 1 cup cheddar cheese and mix well.
● Pour two cups of water into Instant Pot and place rack inside.
● Spray a round souffle or baking dish that will fit inside your instant pot with non-stick spray.
● Tear off two pieces of aluminum foil and fold over 3 times. Roll ends over to form handles. Place baking dish in the middle and lower into Instant Pot. ● Cook on high for 5 minutes. Release steam using quick release and allow to set for 5 additional minutes.
● Lift Apple, Ham, and Cheese Instant Pot Breakfast Casserole dish out via the foil.
● Garnish with a few sprinkles of cheese and green onions or parsley.
