Champagne Jello Shots Recipe
Having a celebration!? Ringing in the New Year? A Madri Gras celebration? A wedding shower? These fun and easy to make champagne jello shots will be just the thing to make your celebration merry.
Jello shots are a very popular party “drinks”. Everywhere you turn someone has a Jello shot recipe. But, in a bit of irony, most “Jello” shot recipes are not made with “Jello” (Kraft) at all… they are made with unflavored gelatin, usually Knox (Unilever) or the store brand.
While researching gelatin shots recipes, I spent some time on the Knox gelatin page, and the read is fascinating. It is the largest distributor of gelatin selling 60% for home and institutional usage, and 40% to industrial and manufacturing. Knox really took off after the owner died and his wife took over the company. If you have a few minutes, give it a read. I learned some things (the first gelcap in the 1920s!), and you may too.
Notes
● I line a baking tray with XX soufflé cups before I pour any jello shot mixture. It makes transporting the jello shots to the fridge MUCH easier!
● If you are making these in a shot glass, first rim the shot glass with simple syrup, and then use edible gold glitter for the dry. Click here for instructions on how to rim a cocktail glass.
● Even though Knox unflavored gelatin was used in this recipe, you can use a store brand.
● If you use 1 or 1.5-ounce glass shot glasses or soufflé cups you will end up with 40 or 30 of these (depending on the shot glass size).
● The edible glitter worked great for the champagne “sparkle”. Other ideas (which I have not tried) is decorator sugar (larger sugar pieces) in a multi-color, decorator sand (yellow), or round “pearls” (like you might use on a cake).
Jello Shots are pretty easy to make. This is the basic recipe anyone can follow:
● 1 small box of Flavored Gelatin (there are others with unflavored Gelatin, but this is the basics)
● 1 cup water, boiling
● 1 cup of: vodka/rum/tequila/whiskey/schnapps/liqueurs
The 1 cup of some sort of spirits is the key. The different flavor combinations of alcoholic beverages combined with the flavored gelatin are what makes the tasty jello shot varieties.
Champagne Jello Shots Ingredients:
● 25.4 oz Champagne
● ½ cup Simple Syrup
● 1 tsp Lemon Juice
● 2 Unflavored Gelatin Packets (Knox, store brand)
● Edible Gold Glitter
Champagne Jello Shots Mise en Place:
● Medium Pot
● Measuring Cup
● Wooden Spoon or Silicone Spatula
● 18 2oz Souffle Cup with Lids or Shot Glasses or Plastic Shot Glasses
Champagne Jello Shots Directions:
● Place 18 plastic soufflé cups on a large plate or tray. Set aside.
● Pour 2 cups of champagne into a large saucepan.
● Add ½ cup of simple syrup and 1 teaspoon of lemon juice and stir.
● Sprinkle the 2 unflavored gelatin packets on top of the champagne mixture and allow it to “pillow” for 3-5 minutes.
● Place the pan on the stovetop under medium heat and heat the liquid up until the gelatin is completely dissolved. Remove from heat. Allow the jello shots to cool for 3-4 minutes.
● Pour the remaining cold champagne into the saucepan and stir well to distribute.
● Pour the liquid champagne gelatin into the prepared soufflé cups, filling up to the top of each cup.
● Place in refrigerator to set, approximately 4 hours. (If you are not serving the gelatin shots right away, you can place lids on the cups until you are ready to serve.)
● Before serving, sprinkle edible gold glitter on top of each champagne jello shot and serve immediately. The glitter eventually bleeds into the gelatin after about ½ an hour so be sure to complete this step right before serving!
● Keep in the fridge or on ice when serving, especially on a hot day.

Hi! In your recipe you call for 25.4 oz of champagne. However, the step by step calls for 2 cups of Champaign then another 2 cups to mix in. This is a total of 32 ozs.
Trying to determine if it’s 2 cups to cook then add one more cup to mix in- or truly 4 cups total.
