Cherry Cordial Cookies Recipe
These cookies look difficult to make, but they are not. They are pretty simple, and they offer the added bonus of a tasty little cherry in the middle.
Cherry Cordial Cookies Notes:
● Though the recipe uses a stand mixer, hand-held electric beaters work well too.
● If you do not have a double boiler, you can easily fake it as long as you have two pots of the same size. You fill a pot halfway with water. Place it on the stove and allow the water to boil. Then, take your second pot of the same size, and put in the ingredients in that dry-pot. Place the ingredient filled pot on top of the pot with the boiling water (I actually place the first pot on top of the second immediately, but for descriptive purposes, it was less confusing to explain it this way). Your ingredients will now melt quickly… stir to help keep it smooth!
I wanted to show the step by step photos to clarify just how easy it is to mold and decorate these Cherry Cordial Cookies because the description makes it sound a bit more complicated than it really is.
● Make sure you drain your maraschino cherries well but do NOT toss the juice.
● Have everything set up to frost: melted chocolate frosting, decorator sugar, chopped almonds, and the cooled cookies.
● The frosting is smooth and liquidy and will cover well. Once you have dipped your cookies, immediately dip the frosted cookies into the chopped almonds, the decorator sugar, both, or none!
● This is a pretty clean process!
● In the end, you have cookies that look like a lot of work, that really wasn’t!
Cherry Cordial Cookies Ingredients Cookie:
● ½ cup Semi-Sweet Chocolate Chips
● ½ cup Brown Sugar, packed
● ¼ cup Butter, softened
● 1 Large Egg
● 1 cup Flour
● ¼ tsp Baking Powder
● 16oz Maraschino Cherries (1 jar)
Cherry Cordial Cookies Ingredients Frosting:
● 1 cup Semi-Sweet Chocolate Chips
● 2 tsp Vegetable Oil
● 3 TBSP Maraschino Cherry Liquid
● 1 cup Chopped Almonds
● 2 TBSP Decorator Sugar
Cherry Cordial Cookies Mise en Place:
● Stand Mixer, bowl and beaters
● Small Pot
● Baking Sheet
● Cookie Scoop (or spoon)
● Measuring Cup
● Measuring Spoons
● Spatula
● Wire Rack
● Double Boiler
Cherry Cordial Cookies Directions:
● Directions to make cookies:
● Preheat oven to 350°.
● In a small pot over low heat, melt ½ cup semi-sweet chocolate chips until smooth.
● Using a stand mixer, in a large mixing bowl, combine ½ packed cup brown sugar and ¼ cup softened butter; beat until fluffy.
● Add egg and the melted chocolate chips; mix well.
● Add 1 cup flour and ¼ teaspoon baking powder; mix well.
● Transfer dough to another bowl, cover, and refrigerate for 15-30 minutes for easier handling.
● Drain your maraschino cherries well, and keep the juice! You will need the juice for the frosting.
● Remove dough from the refrigerator. Remove a teaspoon of dough into your hand. Put a small hollow into the center of the dough. Place a maraschino cherry into the center, and then cover the cherry with the rest of the dough.
● Roll the dough with the cherry inside into a round ball.
● Place your cookie dough on an ungreased cookie sheet 1 inch apart.
● Bake at 350° for 10-14 minutes, or until set.
● Remove cookies from your cookie sheet to a wire rack; allow to cool completely.
● Directions to make the frosting:
● In a double boiler, melt 1 cup chocolate chips and 2 tablespoons of vegetable oil together; stir until smooth.
● Remove from heat, and add 3 tablespoons of maraschino cherry juice; stir well.
● Dip your cooled cookies into the chocolate frosting in the pot to frost.
● Immediately dip the frosted cookie into your chopped almonds and/or decorator sugar.
● Place cookies on wired racks; allow frosting to harden.
● Store in an airtight tin for up to 5 days.
