● For my UK and Australian friends: confectioners sugar is icing sugar (powdered sugar, 10x).
● In the US 8 tablespoons of butter = 1 stick, and 1 stick of butter = ½ a cup.
● Use room temperature cream cheese. It will beat more easily.
● Use full-fat cream cheese when possible. Some people enjoy using low-fat cream cheese, but for me, it is the full-fat stuff to make the best cream cheese frosting recipe you can that not only tastes great but also produces fluffy frosting.
● If, for some reason, your frosting is thicker than you would like, add a splash of milk or heavy cream to the frosting. Less liquid produces a thicker frosting, and more liquid produces a thinner frosting. The desired consistency might change for you from recipe to recipe.
● I use salted butter at room temperature for this recipe. You can use unsalted butter if you like. It will taste a bit different, however.
● If you prefer a different flavor to vanilla, simply substitute a different extract. You may need to add a bit more than half a teaspoon.
● Always frost completely cooled baked goods so your frosting does not melt on application.
● You can use a piping bag and tip to decorate with this frosting as it is not only a spreadable cream cheese frosting, it has a pipeable consistency. You may need to double the recipe for elaborate decorations.
