Alfajores are South American sandwich cookies available worldwide. These delicious treats are originally from Argentina, but we have seen them in Columbia bakeries. We have also gotten them in Mexican and Spanish bakeries and have seen them available in Portugal (where I first encountered them). The original recipe was in a 1933 cookbook by Petrona Carrizo de Gandulfo (Doña Petrona), an Argentinean cookbook writer and television chef.
We have another trip planned to South America soon—this time visiting six countries—and I plan on sampling these delicious cookies in every country to “test” for variety. Hey, someone has to do it. It may as well be me!
Alfajores are a cookie sandwich. They are the favorite cookies of Argentina and Peru, and different variations can be found in different regions. This easy alfajores recipe is for cornstarch cookies. This great recipe is for a traditional cookie (chocolate alfajores are a thing now) that results in a soft cookie filled with creamy dulce de leche center that melts in your mouth.
You can use store-bought dulce de leche or make your own. Here is how to make homemade dulce de leche:
1. Fill a few ramekins with condensed milk. Cover the top with aluminum foil to avoid the condensed milk getting burnt.
2. Put the ramekins in a pan and fill the pan with hot water.
3. Bake in am oven for 1 hr 45 mins at 425°F.
Tips and variations for making this east alfajores cookie recipe:
● If you do not wish to use a round cookie cutter, flour the top of a drinking glass and use that to “cut” the dough.
● The dough can be made and kept in the refrigerator for several days prior to baking. Wrap it in plastic or use an air-tight container.
● Sprinkles on the sides instead of plain, confectioners sugar, or coconut!
● If you are making these like a Linzer cookie with a cutout on the top layer, you can fill a piping bag and tip to make beautiful flowers, stars, etc, of the dulce de leche.

Easy Alfajores Cookies Recipe Ingredients:
● 1 cup Corn Starch
● ¾ cup All-purpose Flour
● ¾ teaspoon Baking Soda
● Pinch of salt
● ½ cup Butter, at room temperature
● ½ cup White Granulated Sugar
● 2 large Egg Yolks
● 1 teaspoon Vanilla Extract
● 1 cup Dulce de leche
● ¼ cup Shredded Coconut (optional)
● ¼ cup Confectioners Sugar (optional)
Easy Alfajores Cookies Mise en Place:
● 2 Baking Sheets
● Parchment Paper
● Bowls

Easy Alfajores Cookies Recipe Directions:
1. Combine cornstarch, flour, baking soda, and salt in a medium bowl. Stir to combine. Set aside.
2. In the large mixing bowl of a stand mixer, on medium speed combine the room temperature butter, sugar, and vanilla extract. Beat until creamy and well combined.
3. Add the egg yolks to the butter-sugar mixture and beat until well incorporated.
4. Reduce the mixer speed to low speed, and add the dry ingredients mixture to the butter-sugar-egg mixture in half-cup batches until well combined.
5. Transfer the very soft dough to a clean bowl and cover with plastic wrap. Refrigerate for at least an hour.
6. Once the dough has been chilled, bring it out onto a floured counter top.
7. Preheat oven to 350 degrees Fahrenheit.
8. Line cookie sheet(s) with parchment paper. Set aside.
9. Roll the alfajores dough out to a thickness of 1/8 of an inch. Using a cookie cutter (your favorite one), cut out the dough and transfer the cookie cutouts to the prepared baking sheets.
10. Bake in a preheated 350°F oven for 8-10 minutes; they will still be blonde. They are overdone at golden brown.
11. Allow cookies to cool on a wire rack.
12. Spread a dollop of dulce de leche filling onto the back of one cookie and place another cookie on top. I like a thick layer of dulce de leche, you might enjoy a thinner layer.
13. Optional: You can roll the cookie into shredded coconut or confectioners’ sugar for added flavor!
14. Store at room temperature in an airtight container.
