Easy Broccoli and Cheese Rice Casserole Recipe
This recipe came from my Grandmother. That is her handwriting on my recipe card. I have had the same recipe box for almost 40 years now! She got the recipe from her sister-in-law (my great aunt, Hi Aunt Irene! (She’s over 90 now!)) and looking at the ingredients, I can almost guarantee it came from Kraft Foods originally.
We have been making this in my family for well over 50 years, so it is a tried and true vintage recipe. There is a good reason that this is truly one of our favorite recipes at family gatherings: it is delicious! I hope it becomes one of your favorite recipes, too!
This is a comfort food side dish or even an easy meal! This great recipe perfectly accompanies chicken, turkey, or pork. Try it with fried chicken, pork chops, or BBQ pork! Yum. This is an easy recipe for a weeknight dinner that the whole family will enjoy.
Tips and variations for making this Easy Broccoli and Cheese Rice Casserole Recipe:
● You do not have to cook the broccoli completely. Just enough to make certain it is fully defrosted and not cold.
● We use instant white rice, not brown rice or wild rice. Does Minute Rice even make brown rice or wild rice?
● Instant rice is used in this recipe. While Minute Rice is used, you can use any brand of instant rice that you like.
● If you cannot find margarine, I don’t know how it will turn out with butter! I have never done it. PLMK what happens.
● In the United States, 8 tablespoons of margarine = ½ cup margarine = 1 stick
● 8 ounces of Cheez Whiz = 1 Jar
● If you do not have cream of celery soup, substitute cream of chicken soup or cream of mushroom soup. The taste will change, but it will be just as good.
● Campbell’s canned soup was used in this recipe, but you can use any brand of condensed canned soup you like.
● I have only ever made this broccoli rice bake with frozen, chopped broccoli. I have never used fresh broccoli or fresh broccoli florets. I have no idea how it would turn out if you used fresh broccoli.
● You can try adding cooked chicken (leftover rotisserie chicken, perhaps?) to the recipe for a complete meal.
● Other great additions to this broccoli rice cheese casserole recipe that might be nice would be a breadcrumb topping, ritz cracker topping, garlic powder, black pepper, or red pepper flakes. Nothing stops you from adding something your family enjoys to turn this into your perfect side dish!
● Store any leftovers in an airtight container in the refrigerator. You could also cover with aluminum foil or plastic wrap, but ensure the edges are secure.
● To reheat, place leftovers in a microwave-safe dish and heat in the microwave for 3 minutes at 50% power, stirring halfway through. It reheats beautifully and looks exactly as it did coming out of the oven.
● This recipe is made with simple ingredients commonly found in your local grocery store.

● 10 ounces frozen chopped Broccoli
● 1½ cups Water
● 8 Tablespoons of Margarine
● 1 Tablespoon dry minced Onion
● 1½ cups Minute Rice
● 8 ounces Cheez Whiz
● 10.5 ounces condensed Cream of Celery Soup
Easy Broccoli and Cheese Rice Casserole Mise en Place:
● Large Pot
● Measuring Cup
● Measuring Spoons
● Rubber Spatula
● 2-quart Casserole Dish (baking dish)
Easy Broccoli and Cheese Rice Casserole Recipe Directions:
1. Thaw and cook the chopped broccoli. (Lightly steam the broccoli for 5 minutes on medium heat.)
2. Preheat oven to 350°F.
3. Bring to a boil on the stove the water, margarine, and minced onion.
4. To this, add the cooked broccoli and Minute Rice. Let the mixture come to a boil.
5. Remove from burner.
6. Add 8 ounces of Cheez Whiz, and mix well.
7. Add condensed cream of celery soup, and mix well.
8. Place the mixture in a 2 qt casserole and bake uncovered in a preheated 350°F oven for 30 minutes.
9. Serve hot.
10. Refrigerate leftovers in an airtight container in the fridge.
