No special equipment or tools are required, such as a pasta roller, pasta machine, or pasta drying rack. This homemade egg noodle recipe only takes a few minutes to make and can be used fresh or frozen for later. This delicious addition to your recipe repertoire will have you forgoing store-bought noodles in the future.
This great recipe is for basic, old-fashioned homemade egg noodles, just like grandma used to make. Variations are up to you! So, whip up a batch of egg noodles today. It really is an easy recipe and you will be so glad you did.
Tips and variations for making this homemade egg noodles recipe.
● Use large eggs. If you use jumbo eggs, you may need to add more flour to the dough.
● This makes a lot of noodles. Probably too many for you to use at one time unless you have a very large family. You will want to freeze some for later consumption. Freeze the egg noodle dough in an airtight container before rolling it out. Allow to defrost in the fridge, and proceed with the instructions when thawed.
● Freeze the homemade egg noodles after they are cut and before they are cooked in an airtight container. You will want to flash-freeze in a single layer. When adding to the airtight container, either freeze in a single layer or place parchment paper between stacked egg noodles. When ready to use, cook them from frozen in a pot of boiling water or soup.
● When boiling the water to cook the egg noodles, add a pinch of salt to prevent sticking.
● You can roll this dough thinner and use it to make homemade ravioli.
● Change it up and add fresh ground black pepper or fresh herbs.

● 1 Large Egg (whole egg)

1. In a large bowl, stir together the flour and the salt. Make a small well in the middle and set aside.
2. In a small bowl, combine the egg, egg yolks, water, and vegetable oil.
3. Pour the egg mixture into the flour well. Stir to combine.
4. Knead the egg noodle dough until smooth, approximately 10 minutes, on a flat and well-floured surface.
5. Let the dough rest for 10 minutes.
6. Divide the dough into four (4) pieces. Using one piece at a time, roll the dough into a square approximately 1/8 of an inch thick. Dust with flour throughout this process to keep the dough from sticking to your work surface.
7. Using a knife or a pizza cutter, cut the dough into thin strips.
8. Repeat steps 6 and 7 with the remaining dough.
9. Allow the egg noodles to air dry at room temperature for approximately 15 minutes. Boil the noodles in salted water for approximately 5 minutes – until they are al dente (tender but firm).
10. Use the noodles in your favorite recipe or freeze them (before boiling) for use later.
