Yes, I know easy recipe + tart do not always go together, but this is a cheater tart! It is a simple recipe, especially when using a prepared, refrigerated pie crust. There is no custard (which is time-consuming) and it is not super-sweet. No tart pan is necessary, merely a baking sheet.
Easy Plum Tart Recipe
Some people may think of this as a summer dessert, but with Southern Hemisphere summer fruits being shipped north in the cold winter months, you can make this plum dessert any time of the year when fresh plums are available.
There are 20 different types of plums. For this delicious recipe, I would choose Santa Rosa plums, Blackamber plums, or Mirabelle plums. You can, of course, choose your favorite plums: prune plums, red plums, black plums, Italian plums; basically any regular plums in your grocer’s produce department will work. Just watch for how bitter the fruit skins might be.
Tips and variations for making this Easy Plum Tart Recipe:
● To add additional sweetness to the dish, sprinkle with confectioners’ sugar after baking. For my UK and Australian friends: confectioners’ sugar is icing sugar (powdered sugar, 10x).
● If you prefer to make your own tart crust, use this easy pie crust dough recipe to make a delicious crust that is perfect for this plum tart recipe.
● If you prefer, you can toast the walnuts in the oven.
● These plums are not peeled. If you prefer to peel them (much of the bitterness in a plum comes from the outer skin), go for it! If you find it easier, heat hot water on the stove until boiling, submerge the plums for 1-2 minutes, and quickly plunge into an ice water bather. Remove the skin from the plums while warm, but you will find it easier to slice the plums when they are cool.
● Use ripe plum, but not over-ripe fruit. Those juicy plums need to be stiff enough to remove the stones and slice.
● How you line the plum slices up on the crust is up to you. Thin slices and a fan pattern works well.
● This tart was made with fresh plums. If you do not have fresh plums, fresh nectarines or peaches might work (I have not tried it). Other stone fruit such as cherries will not work.
● For best results try and bake in the middle of the oven on the center wire rack.
● Serve warm with vanilla ice cream, real whipped cream, or by itself.

● 1 Refrigerated Pie Crust
● 3 Large Plums
● 2 TBSP Feta Cheese
● 2 TBSP Mint
● 2 TBSP Chopped Walnuts
● 2 TBSP Honey
● 1 TBSP Lemon Juice
● Salt, to taste
● Pepper, to taste

Easy Plum Tart Recipe Directions
1. Preheat the oven to 450ºF.
2. Core and thinly slice the plums into slices.
3. If you did not purchase crumbled feta cheese, crumble the feta by spearing it with a fork.
4. Thinly slice the mint into strips or small bits by rolling each leaf and then cutting.
5. Place dough on a sheet pan, and roll out the pie crust out in a circular pattern. Puncture the crust with a fork, and bake for 5 minutes. Once you remove the crust, do NOT shut off the oven.
6. While the pie crust is baking, heat a small skillet over medium heat. Add the chopped walnuts, and cook until beginning to toast; approximately 5 minutes.
7. Lightly spray the cooked crust with olive oil spray.
8. Line the crust with the plum slices. You may leave a gap, up to a 2-inch border, or go to the edge. The orientation and design are up to you.
9. Top the plums evenly with the toasted walnuts, mint, and feta cheese.
10. In a small bowl combine the honey and lemon juice. Stir to mix thoroughly. Season with salt and pepper to taste. Drizzle the mixture over the plum tart.
11. Bake for an additional 5-10 minutes until the crust is fully baked and the cheese is softened.
12. Serve warm à la mode with ice cream.
