One of the best things about snowbirding in Florida is the Fresh From Florida produce!! There is fresh produce all year long down here, and you can tell by the labeling and packaging that it was grown in Florida. When we hit the local Farmer’s market, it simply says just that: local from Florida (and then they usually have the address of the farm listed somewhere). And when we hit the grocery store, we find the labeled Fresh From Florida fruits and vegetables, as well as locally grown signs.
There are also local markets for seafood, as well as in-store labeled Fresh From Florida seafood. And it just tastes better. Remember my post about Sonny-boy and Hubby ocean fishing and bringing back all that fresh sea bass? Well, one of the best things about being down here is you can buy fresh, local fish at a fish market store, or in the grocery store. Heck, even the restaurants have a “local catch of the day” when we order. If you ever have the opportunity to do some ocean fishing or buy the local Florida seafood when out in the grocery store or restaurant, do it. You will be really glad you did.
For this recipe, we purchased Fresh From Florida tomatoes and peppers – both green and colored sweet peppers – produce at the local WalMart and Winn Dixie. Just look for the Fresh From Florida signs and on package stickers in the produce section so you can be sure you are buying Fresh From Florida produce!
Four Color Caprese Salad Recipe
A lovely, crunchy, tasty take on a traditional Caprese Salad, this Four Color Caprese Salad Recipe is a wonderful side dish with seafood, chicken, pork and more! Simple to make, this Four Color Caprese Salad Recipe is loaded with fresh, crispy, delicious Florida vegetables. Yum!
Four Color Caprese Salad Ingredients:
● 3 TBSP Olive Oil
● 1½ TBSP Balsamic Vinegar
● 1 TBSP Dried Oregano
● 1 TBSP Dried Basil
● Dash Salt
● Dash Pepper
● 1½ cups Tomatoes
● 2 Sweet Yellow Pepper
● 2 Sweet Orange Pepper
● 2 Sweet Red Pepper
● ½ Green Bell Pepper
● ½ Large Red Onion Diced
● 1 Cucumber
● 8oz Fresh Mozzarella
Four Color Caprese Salad Directions:
● In a small bowl mix together olive oil, balsamic vinegar, dried oregano, dried basil and a dash of salt and pepper; set aside.
● Wash tomato, cut into bite sized pieces.
● Wash, deseed and cut into bit sized pieces the yellow, orange and red sweet peppers. Do the same to the half bell pepper.
● Thinly slice and dice the red onion (of you do not like onion, feel free to omit from the recipe).
● Peel washed cucumber, scrap the skin with a fork up and down a few times. Slice thin and dice. Add to a medium sized bowl.
● Slice mozzarella into bite sized pieces (or use pearl sized mozzarella balls cut into quarters).
● Add tomatoes, peppers, onion, cucumber, mozzarella to the bowl with the marinade. Mix well.
● Allow to sit for 10 minutes before serving.
