Gluten-Free Autumn Crisp Snack Bars Recipe
When I think of Autumn, in relation to foods that we have around that time, I always think of fruits like cranberries and spices like cinnamon.
These bars are a good mixture of those, along with the crispiness you find in a crispy rice treat, but they also have a few other ingredients as well, making them a great mixture for a good, filling snack bar. They have the sweetness from the marshmallow but with a kick of cinnamon, which makes a great balance.
Gluten-Free Autumn Crisp Snack Bars Recipe Notes:
● Double-check your oatmeal is labeled “gluten-free”. They should all be gluten-free, but if the factory is not a gluten-free environment, they may be labeled with a “cannot guarantee” warning of some sort, instead of being labeled Gluten-Free.

● Sunflower Seeds can be substituted (or mixed half and half) fora the pepitas.
● 8 Tablespoons = 1 stick of butter in the United States.
● To keep the crème from sticking to the spoon or spatula, heat your mixing spoon or spatula for a few minutes before using it in a cup of hot water. This will allow the crème to come right off. This works well right before mixing everything together as well.

● 1½ cups Gluten-Free Crispy Rice Cereal
● 1½ cups Gluten-Free Oatmeal
● 1 cup Pepitas
● 12 TBSP Butter
● 1 tsp Cinnamon
● 4 oz Marshmallow Crème
● 1 cup Craisins
Gluten-Free Autumn Crisp Snack Bars Recipe Mise en Place:

Gluten-Free Autumn Crisp Snack Bars Recipe Directions:
1. Preheat oven to 350°F.
2. Grease an 8″ x 10″ baking dish, set aside.
3. In a large mixing bowl, measure out and combine 1½ cups gluten-free rice cereal, 1½ cups gluten-free oatmeal, and 1 cup pepitas; combine well.
4. Lay out the rice mixture on an ungreased, large baking sheet and toast the mixture in a preheated 350°F oven for 10 – 12 minutes. The oatmeal should be slightly browned and crispy, and have a nutty aroma when it is ready.
5. Melt 12 tablespoons of butter (1½ sticks) in the microwave in a microwave safe bowl and mix in 1 teaspoon of cinnamon once melted. Set aside.
6. In a large microwave safe bowl, melt 4 ounces of marshmallow crème (approximately 15 – 25 seconds).
7. Add the cinnamon-butter mixture to the melted marshmallow crème and blend well.
8. Then, add one cup of craisins to the marshmallow mixture; combine well.
9. Add the dry, toasted ingredients to the marshmallow mixture and mix all together being careful to coat it all, so that the marshmallow is evenly spread out.
10. Spread the mixture evenly in the prepared 8″x10″ baking dish. Let stand for about 30 minutes and then refrigerate for another 30, covering with plastic wrap.
11. The bars will thicken in the cold, and once ready, cut into 2″ bars and they are ready to eat.
12. To avoid having the bars soften and become crumbly, store them in the refrigerator, with plastic wrap covering.
