Gluten-Free, Dairy-Free, Egg-Free, Oatmeal Crumble Bars Recipe

So I must admit when my niece sent me this gluten-free, dairy-free, egg-free oatmeal crumble bars recipe my first reaction was, “Where’s the taste!?” I figured it must be fairly tasteless without all the “good stuff” I normally find in my baked goods. How could a baked good devoid of regular flour, dairy and eggs be tasty?
Well, I am happy to report these are outstanding!!
As I mentioned last week, my niece used to sell baked goods at local farmers markets, fairs, etc. My sister has celiac disease (she was diagnosed 7-8 years ago), so my niece was used to making gluten-free recipes and desserts. She frequently sold gluten-free at these markets (but could not guarantee gluten-free as it was not a gluten-free commercial kitchen where she baked). This recipe originally was a bit different and contained an egg white. At one of the local farmer’s markets, there was a little girl who always looked longingly at my niece’s baked goods, but the little girl has a lot of allergies, including eggs. So, my niece reworked this recipe (and reworked it and reworked it) so that it was not only gluten-free but egg-free and dairy-free as well. This is the finished product she sold for years.
Notes:
● Because there is not a lot of binder in this recipe, cool the bars completely before you attempt to cut them.
● You can use fruit other than the strawberries used in these photos. These are “fruit” bars, so strawberries, blueberries, raspberries, cherries, peaches, nectarines, apples, etc are all good fruit filling choices.
● If you use cherries as your fruit, add 1/8 teaspoon of nutmeg to the crust.
● If you use peaches as your fruit, add 1/3 cup light brown sugar to the crust.
● If you use apples as your fruit, add ½ teaspoon of cinnamon to the fruit mixture, and one teaspoon of cinnamon to the crust.
● The recipe is made using an 8″x8″ baking pan. If using a 9″x9″ baking pan, bake for 40 minutes instead of the listed 45 minutes.
Gluten-Free, Dairy-Free, Egg-Free, Oatmeal Crumble Bars Ingredients:
Crust and Crumble Ingredients:
● 1½ cups Gluten-Free Flour (Bob’s Old Red Mill’s gluten free flour was used)
● ½ cup Sugar
● ¼ tsp Salt
● ½ tsp Baking Soda
● ¾ cup Gluten-Free Old Fashioned Oats
● ½ cup chilled Butter Flavored Crisco
● ½ tsp Fresh Lemon Zest
Fruit Filling Ingredients:
● 2 cups Seasonal Fresh Fruit (sliced or chopped if needed, strawberries were used in the photos shown)
● ¼ cup Sugar
● 1 TBSP Lemon Juice
● 1 TBSP Cornstarch
Gluten-Free, Dairy-Free, Egg-Free, Oatmeal Crumble Bars Mise en Place:
● 8″x8″ Baking Pan
● Non-stick Spray
● Parchment Paper
● Measuring Cup
● Measuring Spoons
● 2 Bowls
● Pastry Cutter
● Spatula
● Grater (for zesting)
● Knife
● Cutting Board
Gluten-Free, Dairy-Free, Egg-Free, Oatmeal Crumble Bars Directions:
● Preheat oven to 375º.
● Lightly spray an 8″x 8″ baking pan with non-stick spray. Place one sheet of parchment paper across the pan. Place a second sheet of parchment paper across the first sheet (to form an +). Set aside.
● Combine gluten-free flour, ½ cup sugar, salt, baking soda, and gluten-free old fashioned oats in a large bowl.
● Cut in butter flavored Crisco with a fork or pastry cutter.
● Remove and set aside 1 cup of the oats mixture for the top crumble.
● Take remaining oat mixture and press into the bottom of the prepared 8″x 8″ baking pan. Set aside.
● In a clean bowl, toss together 2 cups seasonal fresh fruit, ¼ cup Sugar, lemon juice and corn starch.
● Spread fruit mixture on top of crust in the 8″x 8″ baking pan.
● Sprinkle the cup of reserved topping over the fruit mixture.
● Bake in a preheated 375º oven for 45 minutes.
● Remove from oven, and allow to sit for 10 minutes.
● Place pan in refrigerator (on top of a hot pad) to allow to cool completely.
● To remove the bars, simply pinch the parchment paper at opposite side (so the weight of the Gluten-Free, Dairy-Free, Egg-Free, Oatmeal Crumble bars is supported), lift up the bars, and place them on a cutting board.
● Cut and serve.

Maisy, does vegan butter spread? If so, that would be something to look out for (Crisco spreads less than regular butter).

Hi. Can this work with oil instead of butter?because butter has dairy.

There is no butter in this recipe. It is dairy-free. There is butter flavored Crisco – which is gluten-free, daity-free.

Can I use coconut flour in place of gluten free and coconut oil in place of butter substitute?

Christina, I have never used either of those substitutes in this recipe. I do not know if they would work.

I just made these and I love them! Accidentally omitted the lemon zest (whoops) and used Monk Fruit sweetener (1/2c) instead of sugar. They are fabulous! It would be really helpful if I had nutrition facts. I’m planning to trial these on the trail next week… 3 day hike.
