This terrific instant pot chicken gumbo recipe takes a classic recipe and converts it to a simple-to-make dish in an instant pot! If you can use your instant pot (read the directions!) and chop vegetables, you can make this chicken gumbo.
There is nothing more comforting than a big bowl of instant pot chicken gumbo on a chilly night. The aromatic spices and bold flavors make the house smell so welcoming. This hearty meal is full of juicy chicken and sausage and is best when served over rice.
There are rumors that gumbo is a rendition of various French soups, more specifically the fish stew bouillabaisse. However, the invention of gumbo and its history is more strongly linked to slaves in the late 1700s who were gathered in the New Orleans area. Historical records indicate that it began when slaves would use cooked okra and mix it with rice to form a more hearty meal. Over the years, gumbo slowly got adjusted to the recipes commonly we see today.
This instant pot chicken gumbo is probably one of my favorite comfort foods. It makes chilly nights exciting rather than dreary and definitely keeps you warmed up. The main part about this recipe that I enjoy is how easy it is to make such a big batch. It works great as a main course to serve at fall get-togethers or around campfires. It’s easily adapted to fit taste preferences as well.
How Do You Make Instant Pot Chicken Gumbo?
You will want to have your Instant Pot set on the saute mode to begin your recipe. Add in the oil then follow it with the garlic which needs to saute for one minute, alone. Next, add in everything but the chicken, stock, juice, and tomatoes. Allow sauteing for about five minutes. Then, you’ll add the chicken, juice, stock, and tomatoes to the pot. Be sure to put the chicken in first then add the other ingredients on top. Set Instant Pot to the normal setting and allow to cook for 45 minutes and then naturally release. Shred the chicken, before browning up the sausage and adding it to the pot.
Tips For Making Instant Pot Chicken Gumbo Recipe:
● Read the directions on your instant pot.
● Follow the directions on your instant pot!
● You can add salt and pepper to suit your taste, but it may be better to do it after you have served up the chicken gumbo. Same thing for hot sauce!
● Be sure to add the sausage to the gumbo very last. It can quickly be sucked dry of its flavor if it sits in the mixture too long while it is cooking, browning it separately gives it the best flavor.
● Serve alone or over rice. You may want to serve some cornbread or rolls, too. Mmmmm fresh homemade yeast rolls.

The word gumbo refers to a hearty stew, more commonly found in Louisiana. It is common throughout the United States, but the vegetables and meat included in the mix vary from state to state. For example, closer to the water in Louisiana will include items such as shrimp and crawfish in their gumbo. Further away from the water, people will usually include chicken. In most gumbos, it’s common to have okra, onion, celery, and tomatoes, along with a strong stock.
What is the Difference Between a Gumbo and Jambalaya?
The short answer is jambalaya is made with rice in the soup-stew, gumbo does not include it in the pot.
What Can I Put in My Gumbo?
One of the great things about gumbo is that you can pretty much put whatever you want in it when it comes to vegetables. The most common ingredients are celery, okra, onion, peppers, and tomatoes. However, if you have other preferences, feel free to toss them in and try them out. There are very few vegetables that would taste bad in a gumbo since the sauce penetrates each ingredient and brings it all together. You could try spinach, eggplant, kale, green beans, peas, etc. I wouldn’t suggest vegetables such as broccoli, cauliflower, and similar.
Do You Put Tomatoes in Gumbo?
Most people, no matter the style of gumbo (creole or cajun) will include tomatoes. If okra is used as the thickening agent, you will almost always find tomatoes in the gumbo. However, if roux is used, tomatoes are not traditionally used. It all depends on the preference and area you are getting the gumbo or the recipe for the gumbo.
A good gumbo recipe is not hard to make but it sure does taste like a lot of effort was put into it.

● 3 TBSP Oil
● 2 TBSP chopped garlic
● 1 Onion, chopped
● 4.5 oz diced Green Chilis
● 2 Bell Peppers, diced
● 2 cups Celery, chopped
● 2 cups frozen, chopped Okra
● 2 frozen, skinless Chicken Breasts
● 2 cups Chicken Stock
● 2 cups Tomato Juice
● 15 oz Stewed Tomatoes
● 2 Smoked Sausages, chopped
Instant Pot Chicken Gumbo Mise en Place:

Instant Pot Chicken Gumbo Recipe Directions:
1. Turn Instant Pot on to saute and pour in three tablespoons of oil.
2. Add in two tablespoons of chopped garlic, saute for 1 minute, add in one chopped onion, sauté for 2-3 minutes.
3. Add in 4.5 ounces (1 can) diced green chilis, two diced bell peppers, two cups of chopped celery, and two cups of frozen, chopped okra.
4. Sauté for 2-3 minutes.
5. Reset Instant Pot.
6. Add two frozen chicken breasts on top of ingredients already in Instant Pot.
7. Pour in two cups of chicken stock, two cups of tomato juice, and 15 ounces (1 can) of stewed tomatoes.
8. Cook on high pressure for 45 minutes.
9. Natural release.
10. Use two forks to shred chicken breasts.
11. Meanwhile, brown two smoked sausages.
12. Add sausage to gumbo last (this helps retain flavor). Mix well.
13. Serve over rice. Add sour cream, salt, pepper, and hot sauce as desired.
