Jack O’Lantern Rice Crispy Treats Recipe Notes:
● Rice Krispies Treats™ is a registered trademark, so I try not to use it for the recipe title when making treats with crispy rice cereals.
● Rice Krispies® Cereal was used in the making of these Jack O’Lanterns. However, you can use any crispy rice cereal you like.
● This recipe may be doubled.
● If you are sending these into school, a boy or girl scout troop meeting, etc, you may want to wrap them individually with plastic wrap, or an apple wrapper.
● Rolo Minis are used to make the stem. If you prefer Reeses Minis, they work too.
Jack O’Lantern Rice Crispy Treats Recipe Ingredients:
● 10 oz Mini Marshmallows
● 4 TBSP Butter
● 2 drops Red Liquid Food Coloring
● 8 drops Yellow Liquid Food Coloring
● 6 cups Crispy Rice Cereal
● 8 Rolo Minis, unwrapped
● ¼ cup Dark Chocolate Chips
● Green Icing Pen
Jack O’Lantern Rice Crispy Treats Recipe Mise en Place:
● Cooking Spray
● Large, Microwave Safe, Bowl
● Spatula
● Mini Bundt Cake or Fluted Pan or Ice Cream Scoop
● Spoon
● Baggie (or Piping Bag and Tip)
Jack O’Lantern Rice Crispy Treats Recipe Instructions:
1. Spray a large, microwave-safe, bowl with cooking spray.
2. Place 10 ounces of marshmallows and 4 tablespoons of butter in the greased bowl and microwave for 45 seconds.
3. Mix well with a greased spatula.
4. Add the 2 drops of red liquid food coloring and 8 drops of yellow liquid food coloring to the marshmallow mixture; mix well. You might need to add more red or yellow to get your desired shade of orange.
5. Add 6 cups of crispy rice cereal to the orange marshmallow mixture, and mix well until all the crispy rice cereal is coated with the marshmallow mixture.
6. Generously grease a mini Bundt cake or fluted pan. Using a greased spoon, fill each cup with the orange crispy rice mixture, pressing firmly into the pan. Let it cool for 30 minutes.
7. Take the cooled crispy rice out of the mold and press two treats together to make the pumpkin shape, denting the top.
8. Alternatively, if you do not have a mini Bundt cake or fluted pan, use a large greased ice-cream scoop and make crispy rice balls. You can then mold it into a pumpkin shape.
9. Gently press a Mini Rolo on the top of each pumpkin for the stem.
10. Melt the ¼ cup of dark chocolate chips in the microwave and put it in a plastic baggie. Snip a corner of the baggie and make the eyes and mouth of the jack-o’-lantern on the crispy rice pumpkins.
11. Use the green icing pen to make the squiggly vines near the ‘stem’.
12. Serve the Jack O’Lantern Rice Crispy Treats immediately or store it in an airtight container.

This requires a bundt cake pan. It is fun and easy to make and the end result is so cute. Its great for parties because it uses four batches of the rice krispy treats recipe. Make the face with black colored icing or fondant. Orange, green and black food color will be required, I recommend using the food color paste that is used for cake decorating, buy it at the craft store.
