Keto Sugar Free Jam Recipe
This jam is keto-friendly if you have one serving. People spazz when they think about eating fruit on a keto diet (including Hubby who has been doing keto for the better part of two years now), but as long as you do not go crazy eating this sugar-free keto jam and count your other carbs faithfully for the day, you should be good. IOW a serving of this jam will not knock you out of ketosis by itself, but there are no guarantees if you are eating other carb-heavy foods with it.
So, how bad are strawberries for you on keto?

Keto Sugar-Free Jam Notes:
● You could also make this with raspberries, blackberries, or cherries and still be within keto-friendly territory (they are all actually more keto-friendly fruits than strawberries).
● This is also diabetic friendly. If you swapped the fruit to cherries, it would be even lower on the glycemic index.
● Some of the sugar substitutes out today do not agree with everyone’s digestive system. There are a lot of these substitutes even my cast-iron stomach cannot handle. Believe me, no one was more surprised than I was the first time I had gastric distress when Hubby made panna cotta using xylitol. When I say I have a cast-iron stomach, I’m not kidding; I can eat nearly anything. But, that sugar-substitute was not for me. Make sure erythritol (which is very similar to xylitol) is ok for your digestive system.

Keto Sugar Free Jam Ingredients:
● 2.2 lbs Fresh Strawberries, cored and quartered
● 1 cup Water
● 1 Package No Sugar Needed Pectin
● 1 cup Erythritol
Keto Sugar Free Jam Mise en Place:
● Knife
● Cutting Board
● Potato Masher
● Water Bath Canner
● Measuring Cup
● Spoon
● 5 Half Pint Jars
● 5 Pint Jar Lids and Rings
● Jar Funnel
● Ladel
Keto Sugar Free Jam Directions:
1. Fill a water bath canner halfway full of water, and place it on the stove on high to start to boil. It will take quite some time to come to a boil, so it is best to get it started while you prep.
2. Core and quarter the strawberries. You want 2.2 lbs of strawberries after they have been cored and quartered.
3. Place the strawberries in a large pot over medium-high heat, and add in 1 cup of water.
4. When the strawberries have become soft, use a potato masher to mash them into smaller pieces.
5. Once the strawberries have come to a boil, stir in 1 cup of Erythritol.
6. Carefully strain any foam off the top of the strawberries.
7. When the strawberries have come to a rolling boil, stir in the no sugar needed pectin, and continue to stir, cooking at a rolling boil for a full minute.
8. Turn off the heat to the burner, and fill up 5 – ½ pint sterilized canning jars with the strawberries jam mixture. Leave a ½ inch of headspace at the top of each jar. You can use 4 oz. jelly jars or full pint jars, as well as any combination of the three that you like.
9. Wipe the rims of the jars clean with a damp towel.
10. Place the lids and rings on the jar, and add the jars to the water bath canner.
11. Lower the jars into the boiling water in the canner, and process for 10 minutes.
12. Remove the jars, and set them on a counter to cool. You will know they are properly sealed when the little raised button in the center of the lid has popped down. If the buttons do not pop down, you can press on them firmly. If the buttons stay down, the jar is properly sealed. If the jar does not seal, you can process for an additional 5 minutes, or use that particular jar first. It will store in the fridge for several weeks.
