Tips and variations for making this lasagna soup recipe:
● Instead of using the assortments of dried herb, add about 1½ tablespoon of Italian seasoning.
● Use a combination of hot and sweet Italian sausages! Spicy sausage or mild sausage, use what you and your family prefer.
● Don’t like sausage? Use ground beef or ground turkey.
● Beef broth or beef stock may be used.
● Instead of pounding fresh garlic cloves, use already minced garlic in a jar!
● The noodles will get soggy as it sits in the hot soup. Hence the soup is ladled over the noodles, just before serving. Also, store leftover noodles and the soup separately to avoid soggy noodles.
● If you are planning to serve it to a large crowd and there will not be any leftovers, feel free to add the cooked noodles to the soup directly, after it had done simmering.
● You can also add uncooked noodles to the soup too. You add it just before the soup begins to simmer. In that case, please add 2 extra cups of beef broth.
● If you do not have lasagna noodles on hand, try ziti, fusilli, farfalle, etc. Use the kind of pasta your family likes best.

● Allowing the noodles to sit in the broth can turn the noodles mushy. If you plan on freezing this soup, do not add the noodles to the soup, freeze it alone. Whenever you freeze soup make certain you use freezer grade containers. Hubby buys them in giant packs, and we keep the extras down in the basement. Our freezer sometimes looks like a frozen soup factory exploded in it. We freeze soup, stews, leftovers, garden vegetables, etc for later use all year long!

● 1 cup Ricotta Cheese
● ¼ cup Shredded Parmesan Cheese
● ½ cup Shredded Mozzarella Cheese
Soup Ingredients:
● 1 tablespoon Olive Oil
● 2 lbs Italian Sausage
● 1 tablespoon minced Garlic
● 1 large Onion, diced
● 1 teaspoon Dried Oregano
● 1 teaspoon Dried Basil
● ½ teaspoon Dried Parsley
● ¼ teaspoon Dried Thyme
● ¼ teaspoon Dried Rosemary
● ½ teaspoon Black Pepper
● 1 teaspoon salt
● 2 tablespoon Tomato Paste
● 15 ounces of Crushed Tomatoes
● 15 ounces of Diced Tomatoes
● 4 cups Beef Broth
● ¼ cup chopped Italian Parley
● ¼ cup loosely packed fresh Basil Leaves
Serving Ingredients:
● 16 ounces of regular Lasagna Noodles
Lasagna Soup Recipe Mise en Place:
● Medium Bowl

Lasagna Soup Recipe Directions:
1. In a medium-sized bowl, combine ricotta cheese, parmesan cheese, and mozzarella cheese. Mix it until incorporated. Cover and keep it in the fridge until serving time.
2. On the stovetop, in a large Dutch oven or a large pot, heat up a tablespoon of olive oil over medium-high heat. Add the sausage and brown it for 3 to 4 minutes, breaking it up into bite-sized pieces with the spatula.
3. Add the minced garlic and onion and cook for another 3 minutes or until the onions soften.
4. Next, add the oregano, basil, parsley, thyme, rosemary, black pepper, salt, and tomato paste. Cook for another minute.
5. Next, add the crushed tomatoes and diced tomatoes, followed by the beef broth.
6. Give the soup a good mix and bring it to a boil.
7. Reduce the heat and let the soup simmer for 30 minutes.
8. While the soup is simmering break each lasagna noodle into 4 or 5 pieces.
9. Bring a pot of salted water to boil and cook the noodles for 8 to 9 minutes. Drain and toss it with some olive oil.
10. After 30 minutes, check the soup for seasoning and add more salt if needed. Stir in chopped parsley and torn basil leaves.
To Serve:
11. Add the cooked lasagna noodles to individual bowls and ladle soup over the top.
12. Add dollops of the prepared cheese mixture and garnish with more fresh parsley and basil.
13. Serve with slices of crusty Italian bread or warm garlic bread and a glass of red wine. Yum.
14. Store in an airtight container in the refrigerator with the pasta kept separate from the soup.

What a clever idea! I thought lasagna rolls were innovative. I never would have thought to do this but it’s a great idea! Who doesn’t love lasagna? And, who doesn’t love a hearty, tomato-based soup?
