2. In the large bowl of a stand mixer, beat together on high speed the peanut butter, the butter, and the confectioners’ sugar until they are well combined. Approximately 2 minutes.
3. Add the crispy rice cereal and stir it into the peanut butter mixture with a rubber spatula or wooden spoon.
4. Roll the peanut butter mixture into small one to one-and-a-half-inch balls.
5. Place the peanut butter balls onto the lined baking sheet, and then place the sheet in the freezer for 15 minutes.
6. In a small bowl, melt the white chocolate and the coconut oil in the microwave at 50% power in 30-second bursts until smooth. Stir between bursts.
7. Using a toothpick to hold the peanut butter balls, dip the chilled peanut butter balls into the melted chocolate and completely cover the outside. Allow the excess to drip off before placing back on the cookie sheet.
