Pecan Pie Mini Muffins Recipe
I think another name for these would be pecan praline mini muffins because as I said, they taste like candy. These are not “muffin” muffins that you would eat for breakfast. There is really very little “cake” even though there are flour and eggs. Think of them as a sweet treat to round-out a cookie tray.
Tips and variations for making these pecan pie mini muffins:
● You can decrease the amount of butter to ½ cup if ⅔ cup is too much for you.
● Making these as a full cupcake is not advised. Yes, I have done it. Yes, they bake up fine. This is VERY sweet so small servings are best.
● If you want to make them in a cupcake tin, use cupcake liners (although there is so much butter it this recipe probably does not matter). There is nothing in these that makes them rise. They make 10 cupcake-sized muffins.
● Be very careful removing these from the oven. This is basically the top of a pecan pie, so candy. The butter + brown sugar will be sizzling hot.
● If you have a no-bake pie, this could work as a pie crust. It does not rise at all. You would have to grind the pecans to fine, and watch the bake time so it does not burn. Allow the crust to cool, add your no-bake pie filling.
● Do not use the convection setting on your stove (if you have one).

● 1 cup packed Brown Sugar
● ½ cup All-purpose Flour
● 1 cup chopped Pecans
● ⅔ cup Butter, melted
● 2 Eggs, beaten

1. Preheat oven to 350°F.
2. Spray mini muffin pans (this makes 24) with a non-stick spray. Set aside
3. Combine brown sugar, flour, and pecans in a medium bowl.
4. In a separate bowl melt butter in the microwave (or a pot on the stove).
5. Mix butter, eggs, and dry ingredients together by hand.
6. Fill each cup in your prepared mini-muffin pan to ⅔ full.
7. Bake in a preheated 350°F oven for 15-22 minutes (check after 15 minutes).
8. When baked, remove from the oven and cool on a cooling rack.
9. Serve warm or cold. These last for several days.
