Peppermint Icebox Pie Recipe with Oreo Crust
The term “icebox” pie or “icebox” cake is the American term for a cake or pie that uses a lot of whipped cream as the basis for the cake/pie. In Australia, they are called a chocolate ripple cake or log. These cakes were given their names based on the fact that they had to sit in the fridge due to the whipped cream. A refrigerator is also known as an icebox, hence the name. The “icebox” cake was first introduced around World War I and became popular when Nabisco made its own version in the 1920s. They did this to promote their wafer cookers, which are now very popular in desserts across the US.
I remember growing up with these cakes and pies, and there were always so many different flavors to choose from. Of course, not as many as there are now. The most popular flavors I remember were banana, lemon, pumpkin, and chocolate. These days, there are hundreds of flavors and various ways to make an icebox cake or an icebox pie. I wanted to try my hand at a different flavor, which is when I decided on this peppermint icebox pie recipe with Oreo crust.
How do You Make a Peppermint Icebox Pie Recipe with Oreo Crust?
This truly is one easy pie that you will want to remake again and again because it is just that simple. Begin by placing your Oreo cookies in a food processor until they are reduced to crumbs, with no large pieces. Add the butter, pulse until well combined. Press and flatten out the Oreo mixture into a greased pie plate before placing it in the freezer for half an hour. Next, in a bowl, combine the milk and marshmallows and place them in the microwave for 45 seconds. Stir until there are no lumps in the marshmallows. Add the sugar and cream cheese and beat the mixture until thoroughly combined. Add the extract and food coloring and beat again. Now, add the cream and beat until the mixture is fluffy. Fold in the peppermint pieces before spooning the mixture into the Oreo crust, sprinkling the top with more peppermint pieces, and placing it in the fridge. Leave overnight or for at least 4 hours.
Tips for Making Peppermint Icebox Pie Recipe with Oreo Crust
● Be sure to melt your butter before adding it to the Oreo crumbs. When melted, butter acts as a better binding agent than it does when it is solid.
● This icebox pie can either be frozen or stored in the fridge. Either way, it must be covered and be airtight. This pie cannot be stored outside of the fridge or freezer due to its contents.
● The icebox pie must be refrigerated for it to consolidate. This pie is not a good choice for a last-minute dessert as it will need at least 4 hours to chill. However, it is great as a make-ahead pie.
● As a garnish, you can add a dollop of whipped cream and a sprinkle of peppermint pieces.
Common questions About Peppermint Icebox Pie with Oreo Crust
Does Icebox Pie Need to Be Refrigerated?
As stated above, yes, it is important that an icebox pie or icebox cake is refrigerated for at least four hours. This is due to the ingredients included in the cake/pie. In order for them to come together properly, and firm up to make a solid filling, they need to be chilled through. Further, the cake or pie must be refrigerated when being stored, also due to the contents of the cake/pie. These ingredients can spoil if not stored in a chilled area.
How Long Would Ice Last in an Icebox?
This depends on the type of ice. Back when iceboxes were more popular, large blocks of ice were more common. These blocks of ice could last up to a week in an average icebox, even during the hottest days of summer. However, the cubed ice that we’re currently used to would only last a couple of days.
When Were Ice Boxes Used?
Iceboxes were pretty popular before refrigerators became a staple in every home. This was around the 1850s to about the 1930s. Once the refrigerator came on the scene and started becoming more popular in homes around the 1930s, the icebox became pretty obsolete. Iceboxes were not very popular until ice harvesting became a thing. Ice harvesting hit its most popular time around the 1950s when iceboxes became a constant in most homes or businesses.
How Did an Icebox Work?
Iceboxes were much like our modern fridges. However, they didn’t run on electricity. They had a design that utilized the ice as an all-around cooling system. The ice would sit in a compartment at the top of the unit. The icebox itself looked somewhat like a China cabinet. Air would circulate the cold from the ice, down and around the other compartments of the box. These compartments had shelves and cubbies where food and such were stored. When the icebox cake was created, this was the cooling system they had which is how it got its name.
