Red, White, and Blue Pinwheel Cookies Recipe
Red, White, and Blue Pinwheel Cookies Recipe Notes:
● Use parchment paper when baking as wax paper might burn.
● Use gels, not food coloring to achieve the colors. You want the red and white to be very bright and vivid, and gel is a better choice than food coloring.

● Once the three layers of dough are together, the sprinkles on, and the dough log is tightly wrapped in plastic, you can freeze the dough for up to 3 months before baking. That makes these a terrific slice and bake cookie.
Red, White, and Blue Pinwheel Cookies Ingredients:
● 2½ cups All-purpose Flour
● 1½ tsp Baking Powder
● ¼ tsp Salt
● 1 cup Unsalted Butter, softened (2 sticks)
● 1½ cups Sugar
● 1 large Egg
● 2 tsp Pure Almond Extract
● Red Gel Food Color
● Blue Gel Food Color
● Red, White, and Blue Sprinkles
Red, White, and Blue Pinwheel Cookies Mise en Place:
● Measuring Cup
● Measuring Spoons
● Spatula
● Parchment Paper
● Stand Mixer
● Plastic Wrap
● Rolling Pin
● Knife
● Baking Sheet
● Wire Rack
Red, White, and Blue Pinwheel Cookies Instructions:
● Sift together 2½ cups all-purpose flour, 1½ teaspoon baking powder and ¼ teaspoon salt. Set aside.
● In a separate bowl, using a stand mixer, cream 1 cup of butter (2 sticks) and 1½ cups sugar until light and fluffy, about 5 minutes.
● Add the egg and almond extract and beat dough until smooth.
● Gradually add the sifted flour and fold in.
● Divide the cookie dough into 3 different bowls.
● Add few drops of red gel coloring to one bowl and few drops of blue get color another bowl. Leave the third bowl as is.
● Mix the dough well to incorporate the colors. You should have a bright red and bright blue colored dough and one white dough.
● Wrap the dough in plastic wrap and chill for 1 hour.
● Cut three lengths of parchment paper, once for the red dough, one for the white dough, and one for the blue dough.
● Remove the chilled dough from the 1½ cups and roll out the dough on 3 different parchment papers.
● Take the parchment with the red rolled dough. This is the bottom layer.
● Carefully flip the white layer on top of the red layer. Gently peel off the parchment.
● Finally, flip the blue layer on top the white layer and peel away the parchment.
● Now, roll the dough as tightly as possible into a log.
● Add the sprinkles in a large plate and roll the log in the sprinkles, so that they adhere to the dough.
● Wrap the red, white, and blue dough in a plastic wrap and let it chill for at least 2 hours to overnight. You can freeze the log at this stage for up to 3 months.
● Whenever ready to bake, preheat oven to 350°F and line a cookie sheet with parchment paper.
● Slice the log into ¼” rounds.
● Lay on the parchment paper.
● Bake for 10 minutes in the 350°F preheated oven.
● Transfer the red, white and blue cookies to a wire baking to a cooling completely.
