There are a million strawberry quickbread recipes out there, but this isn’t one of them. This is yeast bread, not sweetbread or quickbread. This is a light, soft, and fluffy fresh strawberry bread. Perfect for mornings with coffee, you can also toast it the next day and add butter and jam, cream cheese, or eat it plain; the strawberry flavor is terrific alone. This homemade strawberry bread is not complicated to make. Made with fresh strawberries, waiting for it to bake is the hardest part!
Strawberry Star Bread Recipe
This is a good recipe to make during strawberry season. Either pick your own or buy them at a farm stand. Of course, you can make a strawberry recipe any time of the year as they are available at your local grocery store year-round, but there is something special about in-season farm-fresh fruits.
Fruit bread is delicious, but when we think of one, we usually think of a loaf pan. Your favorite quick bread recipes are moist and delicious fresh fruit breads made in loaf pans or mini loaf pans (or even square muffin tins) and do not require proofing. They are sweet bread and quite delicious (banana bread is the most common flavor, followed closely by zucchini bread). This is not that! This is a traditional bread baked with fruit that we made into jam for easy spreading. This is actually an easy strawberry bread recipe. Do not be intimidated by working with yeast. Once you get past that part, this is an easy bread recipe.
To make bread rise you need to cover it and keep it warm. My great-grandmother used to place her covered bread under her comforter in her bed! You might consider your UN-heated oven or your microwave. Many people simply leave their covered bread to rise on the kitchen counter.
Tips and variations for making this strawberry star bread:
● This is ‘real’ bread made with yeast, not sweetbread or quickbread. Because it has fruit baked into it, it is great for breakfast. If you like, instead of confectioners sugar you can drizzle a glaze over the bread. I would only do that if you are serving a crowd and are certain it will all be consumed in one sitting.
● Do not use hot milk, you do not want to kill the yeast. 100°–110°F is the ideal temperature for Active Dry Yeast. This is a great yeast 101!
● Diced strawberries, chopped strawberries, just make them small enough so the juice will seep out when heating.
● Use fresh bright red strawberries for maximum flavor. The brighter the color, the sweeter the strawberry. You want juicy strawberries, but not overripe or mushy strawberries. More about strawberry ripeness.
● Do not use frozen strawberries as they will make the dough wet and impossible to work with. Also, you do not want the fruit to seep out too much as it will ruin the look of the star. No frozen berries of any kind.
● Instead of a 2″ round cutter to make the circle in the center of the bread, use a 2″ wide glass.
● How to hull a strawberry
● This is an eggless bread recipe.
● This is baked on parchment paper on a baking sheet, not in a bread pan. You can spray the parchment paper with baking spray if you like.
● While I have not done so, I would think blueberries and blackberries would work to make this bread, too.
● Other fillings that might work: cinnamon sugar + butter, Nutella, or make it a pizza bread with pasta sauce, cheese, and sundried tomatoes! Experiment with your fillings, but do not make them too wet or soupy so as not to lose the look of the star while baking.
● If wrapped correctly, or placed in an airtight container, you can freeze this bread for up to two months. You can also bag it and use it for bread pudding! We often have bags of leftover sweeter bread and rolls in our freezer, and then Hubby will make his fabulous bread pudding when he gathers enough remains. It is a great way to not waste leftover bread.
● For my UK and Australian friends: confectioners sugar is icing sugar (powdered sugar, 10x)

Strawberry Star Bread Ingredients:
Bread Dough:
● 1 cup of warm milk
● 2 teaspoons Dry Active Yeast
● 2 Tablespoons Sugar
● 3 cups All-purpose Flour
● ½ teaspoon Salt
● 1/3 cup Unsalted Butter, softened
Strawberry Jam:
● 3 ½ cups Strawberries, finely chopped
● ½ cup Sugar
Milk Wash:
● 3 tablespoons Milk
Strawberry Star Bread Mise en Place:
● Measuring Spoons
● Measuring Cup
● Medium Bowl
● Large Bowl
● Parchment Paper
● Rolling Pin
● Pot
● Covering: towel or plastic wrap
● Baking pan or baking sheet
Strawberry Star Bread Directions:
1. In a medium bowl pour in milk, yeast, and sugar. Allow the yeast to bloom (set it aside for up to 15 minutes).
2. In a large mixing bowl combine the all-purpose flour, salt, butter, and foamy yeast mixture. Mix well.
3. Turn the dough on a floured surface and knead until smooth for about 4-5 minutes.
4. Place the dough in a large greased bowl, cover, and let it rise in a warm place until doubled in size, approximately 2 hours.
5. Hull and cut the fresh strawberries into small pieces.
6. In a saucepan on the stove over a low-medium heat place all the chopped strawberries, and allow the strawberries to heat for 2-3 minutes while stirring in intervals.
7. Add ½ cup sugar into the strawberry pot and cook the mixture until you see a jam kind of consistency. This process will take around 7-9 minutes.
8. Place the strawberry jam in a bowl and allow the mixture to cool down.
9. Prepare the pan by lining a flat baking pan (or baking sheet) with parchment paper.
10. Punch down the risen dough and turn it on a floured surface. Divide the dough into four portions. Roll each portion into 9-inch circles.
11. Place one 9″ rolled portion of dough on the parchment paper and spread strawberry jam evenly. You want to use approximately 1/3 of the strawberry jam (the top layer will not have jam).
12. Repeat the process twice, layering the dough circles and jam.
13. Top the bread with the final 9″ portion of dough.
14. Make a 2-inch round mark on the center of the dough by using a round cutter, do not press down hard. This will be a circle to show how far you want your cuts to go (they will stop at the edge of that circle).
15. Using a knife make 16 even cuts from the edges of the center round, cutting to the edge of the dough.
16. Now hold two adjacent strips and rotate them twice in the outward direction (you are making a twist, so twisting two times). Pinch the ends to make them stick together. Repeat with the remaining strips. You will see a star is formed.
17. Cover and let allow the bread to rise until it has almost doubled in size, approximately 45 minutes.
18. Preheat the oven to 350°F.
19. Before placing the bread into the oven, brush it with milk.
20. Bake the strawberry bread in preheated 350°F oven until golden brown, approximately 20-25 minutes.
21. Remove from the oven. Allow the bread to cool on a cooling rack (wire baking rack).
22. Dust with some confectioners sugar (optional) and serve.
23. Store at room temperature for up to two days.
