This cake was so incredible! fluffy and moist with tender crumbs! And, it was from scratch! One of the best cakes I have ever baked.
Tips for Making this Strawberry Vanilla Poke Cake Recipe
● The fruit garnish at the top can be blueberries and/or strawberries. If you are making this for Memorial Day, Independence Day, or Labor Day, you could use both and decorate the top as a flag!
● Cake flour is necessary for this cake to rise.
● This cake recipe is from scratch. If you prefer a box cake mix, go for it! Just use a white cake mix so your guests can see the red streaks from the strawberry syrup.
● If you are not certain how to grease and flour a baking dish, click here for directions on how to grease and flour a baking pan! Because this poke cake is not removed from the 13×9 Baking Pan you do not use wax paper on the bottom of the pan! A simple grease and flour for easy serving is all that is necessary.
● My wonderful (I’m not at all biased) Classic Vanilla Buttercream Frosting Recipe was used to frost this cake. It is a simple, delicious recipe. If you choose, you can tint the frosting, as well as swap out the vanilla for strawberry extract (again for a stronger strawberry flavor).

Strawberry Vanilla Poke Cake Recipe Ingredients:
● 1 cup All-purpose Flour
● 1½ cup Cake Flour
● 2½ tsp Baking Powder
● ½ tsp Salt
● 1½ cup White Granulated Sugar
● 1 cup Butter, softened
● 2 tsp Vanilla
● 3 large Eggs
● 1¼ cup Whole Milk
Strawberry Vanilla Poke Strawberry Syrup Ingredients:
● 1½ cup Strawberries, minus stems
● ½ cup Water
● 1 TBSP White Granulated Sugar
Use this Buttercream Frosting recipe to frost the top, and add a cup of fresh blueberries or fresh, sliced strawberries, for garnish.
Strawberry Vanilla Poke Cake Mise en Place:
● Measuring Cup
● 13×9 Baking Pan
● Spatula
● Stand Mixer, bowl and beaters.
● Blender or Food Processor
Strawberry Vanilla Poke Cake RecipeDirections
1. Preheat oven to 350°.
2. Grease and flour a 13×9″ pan. Set aside.
3. Sift together all-purpose flour, cake flour, baking powder, and salt. Set aside.
4. Using a stand mixer, combine the sugar and softened butter until whipped.
5. Add vanilla, combine.
6. Add eggs one at a time and combine.
7. Add half of the set-aside flour mixture to the butter mixture, and combine.
8. Slowly add half of the whole milk.
9. Add the rest of the flour mixture and the rest of the whole milk; beat until combined.
10. Pour the batter into the prepared 13″x9″ pan.
11. Bake in preheated 350° oven for 35-40 minutes, or until an inserted toothpick comes out clean. The top should be golden brown.
12. Remove cake from oven and place on a rack or on the top of the oven (do not remove from pan).
13. Poke your cake. I used a kabob skewer. You can use the back of a wooden spoon too. Once you are happy with your pokes, pour the strawberry mixture over the top of the cake.
14. Prepare the strawberry syrup by placing the 1½ cups of fresh strawberries, water, and one tablespoon of white sugar into a blender or food processor. Puree until it is liquid. Pour the strawberry puree onto the top of your cake, filling the poked holes.
15. Place the poke cake into the fridge to chill for about 30 minutes.
16. While the cake is chilling, whip up some buttercream frosting. This best ever buttercream frosting recipe was used to frost this cake!
17. Once the cake is cooled, frost with buttercream frosting.
18. Garnish with fresh blueberries or strawberries.
