The word quiche makes the dish sound more difficult to make than it really is! Making a quiche is actually fairly simple. If you have trouble with pie crusts (this can be an issue for some) simply buy one! The rest is just chopping, frying, and baking for this sweet potato and bacon quiche!
Sweet Potato and Bacon Quiche Recipe Notes:
● You can use a pre-made, rolled store-bought pie crust or make your own.
● If you would like to make your own pie crust, you may want to try this sweeter pie crust recipe. It is a phenomenal pie crust recipe.
● If sweet onions are available when you are making this quiche, you may want to give ’em a try for a different spin on this recipe.
● When sautéing the sweet potatoes, you do not need to cook them all the way through, just lightly brown them.
Sweet Potato and Bacon Quiche Recipe Ingredients:
● ½ pound Bacon
● 1 Onion
● 2 TBSP Butter
● 2 Sweet Potatoes, peeled and cubed
● 1 9″ Pie Crust
● 8 eggs
● 1½ cups Milk
● Salt to taste
● Pepper to taste
● 2 cups Grated Cheddar Cheese

● Frying pan
● Knife
● Cutting Board
● Paper Towels
● Peeler
● Deep Dish Pie Plate
● Grater (if not using shredded cheese)
● Measuring Cup
● Aluminum Foil
● Measuring Cup
Sweet Potato and Bacon Quiche Recipe Directions:
1. Cut up and fry one-half pound of bacon in a pan. When cooked, place the bacon on paper towels to soak up grease on the bacon. Do not discard the bacon grease in the pan.
2. Chop one whole onion.
3. Peel and slice one onion. Fry the onions on medium heat in bacon grease until they are brown and begin to caramelize 15-20 minutes. Remove and set aside.
4. Peel and cube two sweet potatoes.
5. Sauté sweet potatoes in two tablespoons of butter. You do not need to cook these through, just lightly brown them. Set aside.
6. Preheat oven to 400°F.
7. Place one pie crust in a deep-dish pie pan.
8. In a large bowl mix together 8 eggs, 1½ cups of milk, salt, and pepper (to taste).
9. Add in 2 cups grated cheddar cheese, and the cooked onions, bacon, and sautéed sweet potatoes to the egg mixture. Combine well.
10. Pour egg mixture into pie crust.
11. Cover with aluminum foil and bake in a preheated 400°F oven for 40-45 minutes. Remove foil and cook for another 10-15 minutes. Remove from oven and let set for 10-15 minutes.
12. Serve with fruit, biscuits, or salad.
